The taste of Ice-Drip coffee is very special. In the words of fans, Ice-Drip coffee has the taste of "wine". Some friends who drank it for the first time asked Qianjie in surprise, did the ice drop add wine to it, or did the coffee beans themselves have a "taste of alcohol"?
In fact, none of them are. The "alcohol taste" in most Icedrop coffees comes from its unique making method. Ice drops use the speed of ice water to penetrate into coffee powder drop by drop, and then extract coffee liquid. First of all, a set of ice drop pots need to be prepared, and then fresh roasted coffee beans with full aroma.
Qianjie is accustomed to using fruity coffee beans to extract when making ice-drop coffee. Single-item beans processed by honey treatment, sun exposure, anaerobic and other forms are preferred, such as Qianjie Xizhao, Qianjie Blackberry, Qianjie Huaquai, Qianjie Red Cherry... The flavor descriptions of this type of coffee with higher fruit content are mostly peaches, mangoes, lychees, raisins, passion fruits, oranges, pineapples, etc.
Qianjie uses 60g of coffee powder to extract 600ml of coffee liquor each time (the taste will be strong, and ice will be added later). The frequency of ice water drops is about 7 drops in 10 seconds, and the total time is generally 6~8 hours. Therefore, the making time of ice drop coffee is one of the longest of all coffee making methods.
After the drip filtration is completed, it does not mean that the ice drip coffee is ready. If you have tasted freshly filtered ice-drop coffee, you will obviously feel the lack of flavor, a little thin taste, and even a taste that is inconvenient to the mouth. This is because the coffee substance is still floating in the water and the two have not been fully integrated., so drinking will form a "sense of separation."
Therefore, after the ice-dripping coffee is filtered, it is usually necessary to put it into a sealed bottle and place it in the refrigerator to cook at low temperatures (some people will also call it "low-temperature fermentation"). During the low-temperature ripening process, esters that provide coffee with fruity aroma will hydrolyze into carboxylic acids and alcohols, the latter of which provides the aroma of wine fermentation.
Generally speaking, the filtered ice-drop coffee only needs to be placed in the refrigerator for more than 8 hours, and the taste of the coffee will become smooth and mellow. Especially the fruity beans, which will exude a fruit wine and fermentation aroma. It feels like drinking alcohol. Moreover, the longer the ice-drop coffee is left, the stronger the "smell" will become. For example, Qianjie Kenyan small tomato coffee beans are made into ice drop coffee. After 12 hours of maturation, its flavor is expressed as a fragrant fruit wine flavor, clear and clean berry acid without losing its composure, and a sense of ice mellow fermentation.
In fact, it is not only ice dripping coffee that can make "alcohol taste." If you make a cup of hot fruit type coffee and forget to drink it, and come back and smell the cup of coffee the next day, it will also give off a smell of fermentation. If the coffee itself has a fermentation feeling, it will even evolve overnight. Some rotten fruits and sour flavors.
Hot hand-brewed coffee is extracted at high temperatures. When placed in a room temperature environment, it will also ferment a wine-like aroma over time, but this degree of fermentation is uncontrollable, so it is very easy to deteriorate. The low-temperature extraction of ice drop coffee can inhibit the reproduction rate of bacteria, and sealing and low-temperature ripening are also used to slow down the fermentation rate of coffee and inhibit the reproduction of bacteria.
But even so, there is a risk of spoilage if the iced coffee is cooked for too long. Even if it does not spoilage, too strong a fermentation feeling will make the entire cup of iced coffee unbalanced. For safety and flavor reasons, Qianjie recommends drinking the Ice-Drip coffee within 5 to 6 days.
