According to Jorge Rafael Leon-Carmona of the University of Autnoma Metropolitana-Iztapalapa in Mexico, there are five different theoretical mechanisms for evaluating the chemical reactions between antioxidants and free radicals in caffeine; they found that the mechanism of "free radical adduct formation (RAF)" is the main mechanism by which caffeine protects against free radical damage, which is consistent with previous animal studies.
The researchers said the results showed that "caffeine is the main source of antioxidants in coffee."
