As we all know, the coffee machine we often refer to is an espresso machine. Its main use is to make a high-strength coffee through high-pressure extraction. But does everyone know? In addition to directly extracting espresso, the coffee machine also has an unknown "hidden function"~ that is-it can be used to brew hand-brewed coffee!
Although it sounds a bit abstract, it is undeniable that the coffee machine can really be used to make hand-brewed coffee and is very simple to operate. So if you have nothing to do, you can still try to play.
How to use a coffee machine to make coffee? Using a coffee machine to make delicious hand-brewed coffee is not a difficult task! In fact, just like the "artificial hand-brewed" shared by Qianjie a while ago, as long as we use the right parameters used when brewing, we can use the machine to brew a pot of hand-brewed coffee. The reason is also very simple, because what really affects the taste of hand-brewed coffee is mainly the parameters we use when brewing, such as water temperature, grinding, time... The method of injecting water is just an auxiliary act of making coffee, helping us make a pot of delicious coffee more easily. But as long as the parameters are used correctly, even if you use the summer brewing method, you can still brew a pot of delicious coffee.
There are just a few points that you need to pay attention to when using a coffee machine to brew by hand. The first is the water temperature. The temperature of the hot water released from the coffee maker will be different from the water temperature we set for the coffee maker. For example, the water temperature of V3 on Qianjie is set to 94°C, but the actual water temperature of the hot water will be slightly lower. Therefore, when using it, it is best to measure the water temperature of the coffee machine and customize the parameters to prevent insufficient extraction due to the water temperature being not high enough.
Second is the filter cup! Because the water outlet rate and range of the coffee maker are limited, if you want to use the coffee maker to make a pot of delicious hand-brewed coffee without being able to adjust it, it is best to give priority to a slow-flow filter cup without bypass. This can not only prevent the emergence of bypass water, but also produce more immersion extractions to prevent uneven extraction, insufficient extraction and over-extraction of coffee. So without saying much, let's share with Qianjie how to use the coffee machine to make a pot of hand-brewed coffee.
The coffee bean used in Qianjie this time is Qianjie Ethiopian Flower Kui. It is a medium and lightly baked Ethiopian bean with a rich aroma of flowers and fruits. When brewing such coffee beans, it is best to use a slightly finer grind and a slightly higher water temperature, because only a higher extraction efficiency can dissolve the flavor substances in such dense coffee beans. So the parameters used by Qianjie are as follows:
The powder quantity is 15g, the powder-to-water ratio is 1:15, the grinding degree is 75%~80% of the sieve rate of No. 20, the set water temperature of the coffee machine is 95°C, the filter cup is V60, and the water is filled in three stages. (Parameters other than water temperature are not much different from those commonly used.) Before brewing, we can use a spoon to dig a large range of potholes in the center, not deep, but the diameter can be slightly larger. Because the hot water from the coffee maker does not fall completely in the form of a water column, its penetration and agitation will not be very strong. So we can dig a hole in advance to ensure that the hot water can better wet all the coffee powder. Similarly, first let out twice the amount of water to moisten the coffee powder, and steam and exhaust it for 30 seconds.
After the steaming was over, we opened the gate to inject the second section of hot water. The total water volume in this section was 120ml. Note that if the density of the coffee powder used is too high, it is best for us to make the grinding thicker, and then divide the hot water into more sections to inject it to avoid the coffee powder being unable to rise with the water level, causing too much bypass water. (This is also the reason why Qianjie recommends that everyone use non-bypass filter cups)
When the second section of hot water almost penetrated, we opened the gate and put in the last section of hot water, a total of 75ml. Next, you just need to wait for the coffee liquor to be completely filtered out before removing the filter cup and ending the extraction! The total time was 2 minutes and 20 seconds. The Qianjie Ethiopian flowers produced in this way are not much different from those washed out in a conventional way. However, because the coffee powder is not disturbed too much during the period and a certain amount of immersion and extraction is formed, the coffee will taste more mellow and more balanced. Then we can still drink obvious citrus, berries, oolong tea, as well as a light floral flavor, with a long aftertaste and very good.
