Marysabel Caballero, owner of Peon Manor, has more than 200 hectares of coffee growing area distributed over 17 different farms.
Marysabel Caballero and her husband Moises Herrera are growing coffee on more than 200 hectares of land. They are second-and third-generation coffee farmers who have been rewarded several times for their commitment to improving coffee quality in Honduras.
Marysabel's father, Don Fabio Caballero, inherited large tracts of land inside and outside Marcala from his father, who was one of the pioneers of coffee cultivation in Honduras. After years of meager profits, he decided to divide the land among his children, especially his daughter Mary Sabel and her husband Moises Herrera.
Since then, they have been very successful in producing high-quality coffee and have contributed to enhancing Honduras 'reputation for high-quality coffee. Everything they do on the farm is documented, and they invest a lot of time and resources in new equipment and growing new coffee varieties to improve coffee quality. One of the new coffee varieties is Geisha Coffee, and we were lucky enough to get two packets of this coffee this season!
In this batch of cherries, cherries are hand-picked and then hand-sorted to ensure ripeness. Coffee is dried in a greenhouse for 20 days and then dried in the shade for 10 days. The results of the Cup are unbelievable!
Delicate and sweet citrus aromas reminiscent of grapefruit, honey sweetness and pomegranate acidity. The scent of yellow and white flowers remains in the nose from hot to cold.
