The process of wet planing of Sumatra Mantenin coffee beans what is the taste of Indonesian beans?
Manning coffee is mellow, smooth and low acidity, so it is the first choice for many friends who don't like sour coffee. Manning Coffee comes from the Indonesian island of Sumatra.
Sumatra is the sixth largest island in the world. Even if it is an island, it still has high mountains. The island is divided by more than 3800 meters of Barisan mountains. One of the highest peaks is called Mount Glinchi, which is 3800 meters high and is an active volcano located in the middle of the mountain range. The Alabica coffee trees in Sumatra are planted at higher elevations than Robusta, and most of the growers are small farmers.
Coffee was grown in Indonesia as early as 1696 when the Dutch sent coffee saplings from Malabar, India. The trial was successful in 1699, and coffee spread to other islands, including Sumatra. However, coffee in the region did not begin to be exported until the early 19th century. As production grew, so did exports, which exceeded 12 million pounds by 1840. Production peaked in 1860 (before coffee leaf rust destroyed most Arabica coffee trees) reached 21 million pounds. By 1900, much of Arabica had been replaced by Robusta, which was resistant to coffee leaf rust. Sumatra currently has the highest coffee production in Indonesia.
Robusta coffee has replaced almost all Arabica coffee in Java, so by the beginning of the 20th century, some Sumatran coffee produced by Arabica coffee had surpassed Java coffee in reputation. In addition, "Manning" coffee has also gained a reputation. Interestingly, Manning is not a name, but the name of a national tribe.
The reason why an ethnic tribe has become the name of coffee is sandwiched with an interesting story. The Japanese like to drink coffee and have a special preference for coffee with high mellow thickness. During World War II, the Japanese soldier drank a full-bodied cup of coffee in Sumatra. He liked it so much that he went to the owner who provided the coffee and asked the name of the coffee. The boss mistakenly reported his place of origin to the Japanese soldiers. In addition, the pronunciation of "Mandaining" is very similar to that of "Mantenin" in Japanese, so he remembered "Mantenin". When they returned to Japan after the war, the Japanese soldiers were obsessed with the cup of coffee they drank at that time, so they entrusted their Japanese businessmen with friends to find and import "Mantenin" coffee beans found by local Indonesian businessmen. Later, because the thickness of Mantenin caffeine was really high, it became popular in the Japanese market and became famous all over the world.
And that Indonesian local businessman is now the famous PAWANI company (PWN), PWN company even registered "gold Golden Mandheling" as a trademark, while the Japanese side did not admit defeat and registered "gold manning". Therefore, only the golden mantenin coffee bean from PWN is the golden manning in the real sense. However, as the two coffee beans have different commodity names, different brands and different marketing strategies, it is a matter of opinion to talk about which is better.
There is only one gold mantenin coffee on the bean list of Qianjie Coffee, which is from PWN Company of Indonesia. This PWN Gold Manning coffee has a large and uniform particle size with a defect rate of less than 3 per 300g sample beans, the highest grade of G1. On the other hand, PWN is very strict in the production of gold manning. After the machine has screened out the high-quality coffee beans with large particles and high density, it still needs to go through three manual selections to ensure that the defective beans are completely removed, so as to improve the final cleanliness and sweetness.
Qianjie cup test a variety of gold manning found that PWN gold manning coffee taste clean, sweet is obvious, is other gold manning can not imitate. So, how can you make sure that the gold manning you bought is really the gold manning from PWN? Generally speaking, when PWN gold mantenin is sold, the sack containing PWN gold manning beans will be clearly printed with the PWN company logo; in addition, PWN will also provide the buyer with a factory certificate. PWN gold Mantenin sacks and certificates sold on the front street can be seen in the front street coffee store.

Producing area: Sumatra, Indonesia
Altitude: 1100 m-1600 m
Variety: Ateng
Treatment method: wet planing method
Manning coffee has a unique flavor, which stems from its also unique post-processing method of raw coffee beans. Due to the frequent rain and short sun exposure in Indonesia, and the general local economic conditions, the water washing treatment method was not available, so a unique semi-washing treatment method, the wet planing method, was born in Sumatra.
After picking the ripe coffee fruit, the farmers use a peeling machine to remove the peel and pulp of the coffee fruit, ferment the shell beans with pectin in a pool, then wash the pectin with clean water, and then put the wet shell beans in the sun to dry to a semi-dry and semi-wet state.
Farmers will choose to put away the shell beans and sell them to the local coffee raw bean processing station at this time. After receiving these semi-wet and semi-dry raw coffee beans, in order to greatly shorten the drying time of the raw coffee beans, the treatment station will now remove the sheep skin with the shell beans, and then in the sun drying, the drying time is about 3 to 4 days, the water content can be reduced to about 13%.
The unique wet planing of Sumatra is the reason for the sticky and smooth taste and special flavor of Mantenin coffee. The unique flavor of Manning coffee also makes the wet planing famous. It can be said that Manning coffee and wet planing complement each other.
In order to highlight the mellow taste of the coffee, the roaster of Qianjie Coffee adopted the degree of medium-to-deep roasting in order to highlight the mellow taste of the coffee after receiving the gold mantenin from PWN. When cooking, Qianjie suggests lower water temperature, thicker grinding degree, slower flow rate filter cup and three-stage water injection.
