What ratio parameters do Italian almond milk espresso make it best? What coffee beans are the best for classic espresso?
Although it is only March, the temperature in Guangzhou has reached the point where the air conditioner has to be turned on, which is really super! Level! Hot!! Iced coffee is inevitable in such hot weather, but Qianjie has shared a lot about common iced coffees, so today Qianjie plans to share a relatively niche Italian iced coffee ~ This iced coffee is very interesting. It is known as a "clear stream" in Italy. The materials it uses and the taste it makes are very unique. It is an ingredient that we often come into contact with in daily life but not in coffee. The name of this coffee is called Lecce Coffee.
We can tell from the name Caffè Leccese that Leccese originated from Lecce. Lecce is the capital of Lecce Province in Puglia, Italy, located on the Sarentine Peninsula in southeastern Italy. This city is famous for its highly dense Baroque buildings, and its streets are full of carefully crafted Baroque churches and palaces. Therefore, it is also known as the "Baroque City" and has the reputation of "Florence in the South." If you go to the local area, Lecce coffee can be said to be an indispensable tasting item, because it not only has a full "South Italian flavor", but also one of the few local iced coffees in Italy.
Just as few people order cappuccino after noon in Italy,"coffee is not suitable for ice" is also a form of Italian coffee culture. Most Italians believe that coffee needs to be drunk while it is hot, because this way can fully feel the aroma and oil of coffee, and the addition of ice cubes will destroy the balance between the mellow taste and temperature of coffee. Therefore, in Italy, there are very few iced coffee. Very little. But less does not mean nothing. There are still some iced coffees that will be recognized by local people. For example, Caffè Shakerato (shaken coffee) previously shared on Qianjie or today's Lecce coffee are all "members" of them. Because they are very distinctive, they can become the "special case" of Italian coffee.
Like most specialty coffees from other regions, Lecce coffee is a coffee that combines local specialties. The Puglia region where Lecce is located is an important agricultural producing area in Italy. Almond forests are widely distributed in its inland areas, so the special flavor added to this cup of Lecce coffee comes from almonds. But not the almond itself, but the almond milk-flavored syrup.
Qianjie was not optimistic about such a cup of coffee at first, because Qianjie was stimulated by the taste of the relatively strong almonds when he tasted almond milk syrup for the first time! It doesn't taste like the usual nutty, and it tastes like... Loquat cough lotion... But I never imagined that this taste would produce a very harmonious taste after being blended with coffee. It no longer tastes like cough syrup, but more like fragrant almond chocolate. It's quite good! So without saying much, I will come from Qianjie to share with you how to make this Lecce coffee full of South Italian style!
The ingredients needed to make Lecce coffee are very, very simple. There are only three: almond milk syrup, espresso, and ice cubes. However, if you want to taste the more classic flavor of Lecce coffee, Qianjie Association recommends that you use medium-to-deep roasted Italian blend beans, especially Qianjie Italian classic blend with 10% Luo beans in the Qianjie bean list. The existence of a small amount of Luo beans can not only restore the flavor of classic Italian coffee, but also bring rich oil to the coffee.
The production is very, very simple! We can first put the syrup and ice cubes into the prepared cup. Here, the ice cubes used in the front street are 60g, and then the syrup is 10ml.
When it's ready, we can start extracting espresso. The amount of powder used in the front street here is 20g, the powder-to-liquid ratio is 1:2, and the extraction time is 30 seconds. Place the cup directly on the outlet during extraction. When the coffee extraction is over, we can get a cup of Lecce coffee with beautiful layers ~
Stir lightly with a spoon before drinking, and then drink in large gulps! As Qianjie said, you can taste the flavor similar to almond chocolate produced by the fusion of almond-flavored syrup and coffee. It is very sweet, and then the taste becomes very refreshing and not greasy at all due to the presence of ice cubes.
In addition to concentrate, we can also add syrup to the latte to make an almond-flavored latte. Qianjie tried it, and the espresso was still 40ml, and then add 200ml of milk, 100g of ice cubes and 15ml of almond milk-flavored syrup.
Compared with an almond-flavored latte, Qianjie thinks it is more like a latte made with almond milk. The almond syrup and milk blend very harmoniously without any sense of disobedience. It is also quite good! You can try it. But if you want to try it yourself, there is one thing to note. The almond milk syrup collected on Qianjie Internet is all in a large bottle, 1L, and is expensive. If you don't use it in a store or the syrup has other uses and you don't find a small bottle of almond syrup, it's best not to try it easily, otherwise it will easily cause waste ~
