1. The common purpose of making the extraction more uniform/preventing clogging is to make the extraction more uniform! Just like the extraction of espresso machines, we only need to contact the hot water with the filter paper first, so that the filter paper can "evenly distribute" the hot water to the powder cake, thereby achieving a more uniform extraction. The only difference from the espresso machine is that the hot water used to extract coffee in the mocha pot goes from the bottom up, so to achieve this goal, we need to put filter paper on the bottom of the powder bowl.
However, after actual testing on Qianjie, it was found that the filter paper on the pad would not bring much change to the extraction of coffee. The coffee beans used at that time were Qianjie's classic combination of Qianjie bean lists that is very suitable for making Italian and mocha coffee. Qianjie used them to brew two sets of mocha coffee, one set was padded with filter paper at the bottom, and the other set was unpadded. The result is that the taste has not changed much. The performance of the two groups of mocha pot coffee is the classic combination of the front street with the strong aroma of chocolate, nuts and cream. The taste is mellow and the aftertaste is outstanding. Both are very delicious!
If there is a difference, it is that the one with filter paper on it will be a little thicker than the one without filter paper, but only a little. It is difficult to detect this change without comparison, because the difference is really not much. Compared with extraction, Qianjie prefers another feature of the filter paper at the bottom-it can perfectly knock out coffee powder cakes. In the past, when we knocked out the powder cakes in the mocha pot, it often occurred that the powder cakes did not take shape, and a large amount of coffee powder remained in the powder bowl and needed to be dug out manually. And when we put the filter paper on it, because there is a filter paper on the bottom, we can directly knock out a complete cake. Not only that, there will be no situation where coffee powder will get stuck in the holes in the filter screen of the mocha pot. It can be said that it is much easier to clean after putting the filter paper on it.
So if you want to make it easier to clean the mocha pot, Qianjie will recommend that you put filter paper on the bottom of the powder bowl, because this can really help you save a lot of cleaning time and steps, although it won't be a lot. That's it ~~
2. Reduce coffee grounds and optimize the taste. Compared with the bottom of the powder bowl, many friends prefer to put filter paper on top of the powder cake. Because this can bring two significant changes to the coffee in the mocha pot, the first is to optimize the taste. Since the filter of a mocha pot is not as precise as the filter paper, some of the finer particles can be added to the coffee through the filter. Although these particles can add a certain mellow degree to coffee, they can also bring some negative manifestations such as mouth obstruction and bitterness to the coffee. By putting a filter paper on the powder cake, we can increase the accuracy of filtration and reduce the overflow of coffee powder, thereby making the taste of coffee cleaner.
In addition, putting filter paper on the powder cake has another advantage, which is that it can increase the pressure during coffee extraction by a small amount. The reason is also very simple. Since the addition of filter paper narrows the channel through which the coffee liquid penetrates, this makes the coffee liquid need greater pressure to break through. Although the increase in pressure will not be much, when the coffee powder we use is not ground fine enough, or the amount of coffee powder is not enough, adding a few filter papers is a good way to improve the extraction efficiency ~
