After all, it is also a pressurized extraction, and the intensity of the coffee brewed is second only to the espresso machine. (In fact, other coffees can also be made.) There are only three skills and methods we need to master: selecting coffee beans, extracting espresso, and finding the right ratio.
Selection of coffee beans The coffee beans used determine the basis of the extracted coffee flavor. If we want to make a cup of Combo with excellent taste, then the choice of coffee beans is very important. Because most coffee shops use unusual coffee beans when producing Combo, because only in this way can they make a Coffee combo that is different from other shops. In terms of the choice of coffee beans, Qianjie Association recommends these beans. They are currently popular choices for Combo produced by many coffee shops. For example, Qianjie Boundary Estate·Xizhao in Qianjie Bean List, the coffee made with it will have strong fruit flavors such as grapes, passion fruits, apricot peaches, etc.; or Qianjie Boundary Estate·Big navel, the coffee made with it will have berry tones such as blackcurrant, blueberry, and grapes.

The production of espresso After we select the coffee beans, the next thing we need to do is extract a high-concentration coffee, because if we want to make special or milk coffee, then the concentration of the coffee base must not be low, otherwise the special/milk coffee made will be easy to be watery and widowed. The specific parameters were shared by Qianjie in the article "What coffee beans are suitable for mocha pots" two days ago. It is very simple, that is, fine grinding and reducing the amount of water.
Take Qianjie as an example. Qianjie used the bean of Qianjie Boundary Manor·Xizhao to share this time. The amount of powder used is 20g (single mocha pot), and then the degree of grinding is Italian flour-like grinding. The amount of water is 4 times the amount of powder. It is best to use hot water, because hot water can not only shorten our cooking time, but also reduce the risk of over-extraction of coffee. Regulation of firepower The front street meeting recommends that everyone use a large fire at the beginning to shorten the time, and then switch to a small fire or turn off the fire after the coffee liquid is out to use the residual temperature to extract the remaining coffee liquid, which is almost the node in the figure below.
In the end, the liquid we got weighed 48ml. I believe it is not difficult for you to see from the color of this cup of coffee that its concentration is very high. So then we can use this high-concentration coffee to start making Combo.
Appropriate ratio, but because the concentration of mocha pot coffee is not as high as the concentration of an Italian machine, whether we use it to make "latte","American", or special flavors, we need to use it to make it in a larger proportion.
What does it mean? For example, when Qianjie makes lattes with espresso, the ratio of coffee to milk is 1:5, that is, 40ml of espresso will be paired with 200ml of milk. But if you use mocha pot coffee to make lattes, then the ratio may be reduced to 1:4, which means that 40ml of mocha pot coffee is matched with about 160ml of milk. The reason is as mentioned in Qianjie earlier. Because the concentration of mocha pot coffee is not as high as the concentration, if we apply the concentration ratio to the mocha pot coffee, the taste and taste of the final coffee will not be so good. Therefore, we need to appropriately increase the proportion.
The specific ratio to be adjusted depends on the beans you use and the concentration of the coffee extracted. The lower the concentration of coffee and the lighter the beans are roasted, the greater the proportion may need to be, and vice versa.
