After more than two weeks of sun exposure, dark brown coffee fruits are professionally stored, waiting for the whole flavor to ripen. Before sale, the sun-dried cherry pulp and sheepskin are removed, and then the unripe beans and over-fermented beans are removed. Strict control greatly improves the quality of sun-dried beans.

Yega Xuefei, a boutique coffee producing area in Ethiopia
The ancient saying "Yega" means "settle down", "Xuefei" means "wetland", and Yega Xuefei means "let us settle down in this wetland". Xidamoyejasuefei is a small town in Ethiopia, 1700-2100 meters above sea level, located in the northwest of Sidamo province, surrounded by mountains and lakes. It is one of the highest coffee-producing areas in Ethiopia and is synonymous with Ethiopian boutique coffee. Strictly speaking, Yega Xuefei is a by-product area of the Sidamo region of Ethiopia (Sidamo), which is independent because of its special flavor. In addition to the small town of Yega Xuefei, it also includes three by-product areas such as Wenago, Kochere and Gelena/Abaya around it.
The Waka Cooperative, which is part of the YCFCU Cooperative Union (Yirgacheffe Coffee Farmers Cooperative Union), was founded in 2005 and is one of 22 junior cooperatives. The Waka Cooperative is located in the Gedeb area of the Gedeo district, a remote area within the Yega Coffee, 75 km from the local coffee distribution town of Dilla, and the external road is in poor condition, with 20 km of dirt road from the cooperative to the main tarred road. The elevation is very high, about 1800-1900 meters. Because no chemical fertilizers or pesticides are used in coffee cultivation, Waka farmers have also obtained the Skal organic coffee certification recognized by the European Union. Just as Cochell is famous for washing, Wauka is particularly outstanding for tanning, but both Wauka and Cochell have different treatments of raw beans. In recent years, the sun method has become increasingly sophisticated, greatly improving the traditional extensive mode for hundreds of years, paying more attention to the care of the harvest and sun drying process of ripe cherries, so that the beans retain the sweet flesh and slightly attractive flavor of fermented wine, and make a flavor that is not found in water washing.
Sun Yega Chuefei has explosive peach aromas and charming acidity, with sweet flavors such as strawberries, cantaloupe and pineapple juice, clean fermented fruit sweet, elegant fruit wine and a sweet finish.
