Compared with ordinary single products, expensive coffee beans are often dubbed "top". They will first have outstanding flavor performance, which forms a sharp contrast with other varieties. Then there is the scarcity of production, coupled with a series of publicity and marketing, such as competition awards, auctions, origin stories, etc., combine to create its high price.
For the vast majority of consumers, people drink coffee mainly for two purposes. One is to refresh themselves, and the other is taste. At this time, good drinking and not expensive is the king's way, so they rarely spend a lot of money to buy something they are not familiar with."Top coffee." But it is undeniable that some expensive coffees do stand at the top of the quality pyramid, with richer complex aromas and layers. If you want to not waste them, you must pay attention to the following three details.
1. Don't be too fresh, but keep it fresh.
Qianjie has always placed great emphasis on the freshness of coffee beans, because after the coffee beans are roasted, the aroma will continue to dissipate over time, and there will be basically no flavor in about 50 to 60 days. Some friends also said that the coffee they brewed was fresh, but after drinking it, their throats would feel dry and choked in their throats, or the taste would be light, which would easily appear green. There was a rough sour and bitter taste, but the aroma was not rich enough. This was because the carbon dioxide gas in the coffee beans was too rich, which hindered the release of coffee flavor substances during brewing.
At this time, Qianjie suggested raising beans first. The roasted coffee beans will be about the fourth day, making the roasting taste of the throat uncomfortable less obvious. Then on the seventh day, the flavor will begin to become full, so in order to improve the flavor performance of too fresh coffee beans, Qianjie is accustomed to resting medium and deep roasted coffee beans for 4 to 6 days and medium and light roasted coffee beans for 7 to 8 days.
2. Understand the basic information of coffee beans
We should be clear that no matter the price, coffee beans can be roughly divided into light ~ medium roasting dominated by sour taste and medium ~ deep roasting dominated by bitter taste. 3. Improvement in details

Because the heating time of Guixia is relatively short and the water absorption effect is poor, only 25ml of hot water is used to steam Qianjie to ensure that the coffee powder is all moist and exhausted for 30 seconds. After the steaming is over, enter the second stage of water injection and control it to 120ml, and inject it from the middle out to raise the powder layer.
Then wait for the water level to drop. Under normal circumstances, the water level drops at a uniform rate and slowly, and drops to one-third of the powder layer in about 1 minute 10 seconds to 1 minute 15 seconds. You can see that a "bowl shape" has been formed;
At this time, inject the remaining 95ml of hot water around 1/2 of the liquid level. The rest is completed by waiting for the coffee solution to drip into the lower pot and removing the filter cup. The time is about 2 minutes to 2 minutes and 05 seconds.

Medium and deep roasted coffee takes longer to heat and produces more bitter substances, but for high-grade coffee beans like Qianjie Blue Mountain No. 1, it also means a richer aroma that provides sweetness. In order to make coffee more obvious, Qianjie generally adjusts the water temperature, powder-to-water ratio and technique at the same time.
To create a high sweetness, we still increase the amount of water to improve the extraction of substances, and the powder-to-water ratio becomes 1:16. The powder-to-water ratio takes into account that deep-roasted beans have a charred and bitter taste, and hand-brewed is a slow process. If too extreme parameters are used, the coffee will be over-extracted if you accidentally use it. Therefore, the No. 1 Blue Mountain Street before brewing will use a water temperature that is 2 ° C lower than that of ordinary medium and deep-roasted coffee, that is, 85~86 ° C.
In terms of technique, Qianjie will divide 225ml of hot water into 4 sections and inject it multiple times to increase the layering of the coffee.
First, steam with 30ml of hot water for 30 seconds, and you can see that it will form a round bulge; then inject a second section of 80ml from the center around the outer ring. After injection, the liquid level is about 3/5 of the filter cup;
When the water reaches halfway, continue to inject 70ml of water into the third section, and the circle remains the size of a coin; when the water in the filter cup is almost bottomed out, all the remaining 60ml of hot water can be poured.
