Anjing Manor (Tres Soles):
The history of Anjing has been mentioned in previous introductions (Paloma and Illana). Anjing Manor (Tres Soles) means three suns in Spanish, and three suns means "crystal" in Chinese, so it is named Anjing, headquartered in Taipei and Taichung, Taiwan. The coffee garden is located in the Jinotage region of northern Nicaragua, with fertile volcanic soil at 1200 meters above sea level in the volcanic zone. The manager of Anjing Manor, Yang Ziqing, a pediatrician from Taiwan, bought the manor more than a decade ago. Apart from drawing on Nicaragua's traditional coffee planting experience and manpower to cultivate seedlings, the scientific cultivation of coffee trees mainly depends on the technology and concept of agricultural microorganism from Taiwan, using microtechnology and natural organic additives to control and manage the coffee farm.
The treatment of this honey bean is completely different from that of other honey beans on the shelf. Anjing's honey treatment is also called wine treatment, which uses enzymes to decompose the pulp / pectin into liquid. Then the liquid is used instead of washing water to wash and ferment the raw coffee beans to increase the sweetness and aroma of the beans.
