Hunkute, a cooperative of 2000 small coffee farmers, is located in the Dalle community of Sidamo in southern Ethiopia, the highest altitude in the producing area. There are two washing plants that specifically deal with cherries, which are named "Honggut No. 1" and "Honggut No. 2" respectively. The two washing plants have 920 members by 2017.

Plant 1, 1850 meters above sea level, was built 10 years ago, and Honggut 2 plant, 2150 meters above sea level, was built 5 years ago. Although the local environment of Dalle is barren and primitive, and the facilities of the treatment plant are simple, it can still magically produce amazing coffee every year.

Two washing plants collect cherries from nearby farmer members. Washing treatment will remove the peel and pulp of shell beans, in the treatment plant will ferment for 24-36 hours, depending on the weather. Then wash the surface mucus, divided into two grades, and then soak in water for 12-24 hours. After the whole washing process is completed, it will be exposed to the African viaduct bed for 10-15 days and dry in natural sunlight. In the drying process of the elevated shed bed, fix and turn, let the air circulate and dry evenly.

All the cooperatives in Ethiopia belong to a guild, and Honggut belongs to the Sidamo Union guild, which can sell and export coffee. They will shell and grade before export. The characteristic of Honggut is that they pursue not only quantity, but also quality.

Honggut is recognized as one of the best quality producing areas in Sidamo. High altitude and complex varieties of raw beans make Honggut permeated with the aroma of citrus, lemon and fine jasmine, making it a popular producing area for many famous coffee shops in the world.
