Mingqian Coffee is positioned as an omni-directional supplier of the industrial chain. Its main business is divided into factories, colleges and stores. If the factory is the main source of the company's profits and the stores are the company's external experience center, the college acts as a line running through the beginning and the end. In terms of production and retail, enterprises have certain data that can be calculated quantitatively, but for colleges, its role in it is more difficult to express with simple numbers.

The main functions of Mingqian Coffee Institute include the following three parts:

1. Quality control of factory coffee and cooked beans production, including procurement, cup testing, adjustment of baking curve, product launch preparation, etc.

Take Mingqian's recent plan as an example: in 2009, Mingqian bought an 80-acre coffee field 1140 meters above sea level in the Gaoligong Mountains in Yunnan Province, and began to develop Yunnan coffee beans. This is also the first line that the college has expanded-- to the origin. Because Yunnan's flower and tea industries are more mature, imitating their trading model, Mingqian organized a coffee raw bean competition in 2014 and 2015, sent Yunnan coffee beans to the competition and went through graded cup testing. I hope to form a relatively complete quality system to help farmers increase their income. At the same time, we also cooperate with the local coffee trading center in Yunnan to carry out classes, train roasting and other techniques, and train professionals from the producing area, hoping to promote the fine development of the industry and break the unstable status quo of local coffee quality. Now, Mingqian Manor in Yunnan has become a more mature product line, which can now provide raw beans stably, and from the end of this year to the beginning of next year, Mingqian hopes to be involved in every point of Yunnan coffee industry chain. Among them, Mingqian Coffee College undertakes the task of opening up Xinjiang soil, formulating new standards and planning new products.

There is a close relationship between the coffee college and the store. In addition to the usual small guidance of the store, the large knowledge structure, technology upgrading and other training are the cooperation between the store manager and the college teacher, and the production standard of the store is decided by the head of quality control of the Coffee Institute. When new employees join the store, they will first be familiar with the outfield operation, and then conduct more systematic and centralized training twice a week. In addition to the students who have ambitions to open a store, there are also individual external training students who become employees in the store, and employees who enter the store must follow the principle of store recruitment and let the store manager consider it. It is not a fixed internal path from external training to store staff.

3. External training is aimed at two main groups: professionals and enthusiasts.

The courses are divided into three categories:

A full set of basic courses (tasting, baking, hand-making, Italian), this basic series is consistent with the coffee industry chain, and is carried out item by item according to the order of the industry chain. The duration of the course is one week, the intensity is relatively high, and the price of 4500 yuan is not the level of an ordinary experience class, which is more suitable for people who want to open a coffee shop or deep enthusiasts.

SCAE courses (courses divided into baristas and bakers), each category is subdivided into low, intermediate and advanced levels, and can be tested directly without training, which is relatively flexible.

Q-Grader course. At present, it has been running a professional course for two years, and at the beginning, it is necessary to take students to take exams abroad. Mingqian has a certified test center in Shanghai in April 2014 and provides training for five days before the course. This test site, which has a certain standard in lighting and temperature, is also the place where the college teachers carry out the Mingqian product cup test.

Because Mingqian Coffee College has the characteristic of "extending in all directions" within the enterprise, it is an ideal environment for employees to have access to the whole industry chain, so it has also attracted a lot of people to sign up. It's not easy to be a lecturer at a coffee college. Mingqian Coffee College currently has 5 lecturers. The recruited staff need to have a certain level of English, and they all need to receive half a year of training (including a three-month teaching assistant) and at least 3-4 rounds of internal mock lectures to formally pick up the whip.

In addition to ensuring that the course is carried out, college teachers will conduct internal and external training in Mingqian Cafe. External training includes: training activities invited by enterprises, which is an opportunity to open up a group of potential customers. Boutique coffee is a small circle, but it also means that the world outside the circle is wider, which is why Mingqian Coffee takes a fancy to this aspect of business. At the same time, after many coffee shop practitioners or preparatory practitioners graduate from the coffee college, they will continue to cooperate with Mingqian Coffee with raw bean products and machines, while other cafes that cooperate with Mingqian will also send their staff for training. and the sales department will also provide certain concessions to this kind of students according to the situation of cooperation. Compared with the highly mobile baristas, the lecturers of the coffee college mainly live in Shanghai, where Mingqian is located. Shanghai provides a more convenient opportunity for communication, as well as opportunities to go abroad to participate in exhibitions in South Korea, Japan, Australia, etc., to understand the new technology and new trends in the industry, which is the time to test the learning ability of coffee lecturers. It is also the biggest challenge for coffee college lecturers-knowledge renewal. At a time when boutique coffee is still in its infancy in China, turning the coffee institute into a separate business may not be a good way to develop permanently. The most important feature of Mingqian Coffee College is the professional training of the whole industry chain, which can be acquired from the college in terms of product characteristics, machine operation, store experience, store positioning and personnel training. It is not easy to open a coffee shop, and it is even more challenging to train people who can open a coffee shop.
