Wicho washing station
The Wicho washing station is located in Delvolida, Sidamo region, near the town of Ilga Alem. The area around the Wicho washing station is rich and diverse, including mountains, plateaus and valleys between these highlands. Small farmers in this area grow their own unique varieties on a small plot of land and send their cherries to the Wicho washing station. This leads to a mix of "mixed heirlooms", revealing the diversity and complexity of Sidamo coffee.
At the Wicho washing station, cherries are rinsed with clean water, then put into a pulping machine and fermented within 36 to 48 hours. The coffee needs to be washed for another 12 hours, then washed and placed on a shady African bed. The crew of the space station strictly controls the drying process to ensure that the parchment is constantly stirred and thoroughly checked for humidity.
The Wicho washing station was founded in 1961, but its current owner, Ato Yitbarek Tilahun, started working on the site in 2010. Yitbarek is a second-generation processor with more than 15 years of coffee processing experience. He learned the craft from his father, Ato Tilahun. For Yitbarek, coffee is like a child, which needs the greatest attention and care in the processing process. "I can't imagine life without coffee," Yitbarek explained. Coffee is like a good eldest son to me. I take care of coffee, and coffee takes care of me. " Yitbarek has improved his products by improving their processing technology to meet the expectations of coffee roasters.
