This coffee is selectively harvested with mechanized harvesters. The harvester crosses the field three times, picking only ripe cherries. Coffee dries slowly on a concrete terrace. It's been in a big bag for 30 days. The producer's brother-in-law and nephews, Luismar and Marco Aurelio, tend the coffee in the fields.
