Asian beans and island flavor: mellow thickness is higher than Central and South American beans and African beans, but the sour taste is lower, the flavor is slightly sunken wood, herbs, spices and soil, and the low stuffy aroma is higher than the rising sour flavor. Island beans are relatively light and gentle, with a light and elegant tone.
Yunnan coffee is a subspecies derived from Arabica, which is generally called Yunnan small grain coffee. Evergreen shrub, small nuts, thick pericarp, sweet pulp, mellow products, low caffeine content, also known as light coffee, is the main cultivated variety in the world.
The best growing environment of Yunnan small-grain coffee is low latitude, high altitude, sufficient rainfall and suitable sunshine, so it is an ideal growing zone between 15 °north latitude and the Tropic of Cancer. However, other areas in this zone, such as Hawaii and Saudi Arabia in the United States, or low altitude or little rain in the desert, are not conducive to coffee growth, only southern Yunnan in this zone happens to have all kinds of conditions.
The western and southern parts of Yunnan Province are located between 15 °N and the Tropic of Cancer, and most areas are 1000-2000 meters above sea level. The topography is dominated by mountains and slopes, with large ups and downs, fertile soil, sufficient sunshine, rich rainfall and large temperature difference between day and night. These unique natural conditions form the particularity of Yunnan small grain coffee taste-strong but not bitter, fragrant but not strong, slightly fruity.
At present, the varieties grown in Yunnan are mainly Arabica small-grain species, whose quality and flavor is similar to that of Central America, belonging to the upper-middle quality. The harvest period of fresh fruit is generally from November to February of next year, and the fresh fruit is mostly processed by washing and wetting. Pu'er, Xishuangbanna, Wenshan, Baoshan, Dehong, Lincang and other places in the south and west of Yunnan are all the distribution areas of small-grain coffee in Yunnan.
Coffee cultivation in Mantenin, Sumatra, began in the 18th century, when it was planted near Aceh province on the north side of Lake Tawar. For a few days, most of the Sumatran coffee area is located in the south of Lindong, Subu and Takengon coffee. Sumatran coffee does not take the producing area as the distinguishing standard because there is little difference between planting areas, but the picking and treatment methods have a great influence on the flavor of Sumatran coffee.
As a matter of fact, the cultivation of coffee in Taiwan has a long history. Both the British and the Japanese have planted coffee trees in Taiwan, but then they did not continue to promote it because of many political and economic factors. Until recently, because of the coffee boom, someone started to reinvest in it. Hebao Mountain in Yunlin Gukeng, Huisun Forest Farm in Nantou, and Dongshan Township in Tainan County are currently several famous coffee producing areas in Taiwan Province, and most of them are planted in Arabica.
