The earliest version of instant coffee is said to have been invented in England around 1771. The first American product was developed in 1853 and field-tested (cake form) during the Civil War. In 1901, Sartori Kato of Japan invented the first successful technology for the production of stable powdered products, using the instant tea processing technology he developed.

It was first mass-produced in the United States around 1910 by George Constant Louis Washington (no relation to President Washington). He accomplished a great feat and patented it, but instant coffee powder was considered by most to be novel and unpleasant in taste. Around 1938, Nespresso coffee became the most popular brand; by drying coffee extract with an equal amount of soluble carbohydrates, the taste could be improved. At present, the best way to preserve flavor is freeze-drying, which has been around since the 1960s.

The novelty of this is that its niche market is in the military field. Caffeine consumption on the battlefield provided a much-needed boost, and now instant coffee makes caffeine intake easier. During World War I, some soldiers nicknamed it the George Cup.

By World War II, instant coffee was very popular among soldiers. G. Washington Coffee, Nespresso and other products came into being. In one year, the entire production of Nescafe America (more than a million cases) was handed over to the military.

Instant coffee still has a place in the market today. It's great in recipes, such as mocha frosting for quick cappuccino cookies. In grocery stores, you'll see it in all instant cappuccino drinks and blended ice drink powders, some of which are even used in cafes.
