In the 18th century, the Dutch used an alternative way of dealing with coffee, first removing the peel and pulp of the coffee fruit and leaving the sticky beans.
These sticky things are the pectin layer of coffee. in order to remove this layer, the Dutch soak the coffee beans in a pool for 1-2 days. when the pectin is separated from the coffee beans, they wash the coffee beans clean with a lot of clean water. The last step, of course, is to dry the coffee beans. This is the way of washing treatment.
Which is better, sun exposure or water washing?
The sun treatment appeared early, and the water washing treatment was improved according to the weakness of the sun treatment. What are the defects of the sun, rely on heaven to eat, because the whole fruit takes a long time to dry, generally need about two weeks, during the unexpected wind and clouds may be this batch of coffee fruit cold. Washing treatment is solved from scratch, no pulp, no pectin, will not provoke insects, when the coffee bean drying time will be faster, remove the uncertainty of pulp fermentation, washed coffee beans look better.
Of course, this was a long time ago. Water washing treatment is developing and sun treatment is constantly improving. For example, the red cherry plan promotes the use of full red fruit sun exposure, and the use of high African beds for sun exposure in producing areas is a sign of improving the quality of coffee. Sun treatment is also subdivided into exquisite sun, slow sun, red wine sun and other "craftsman treatment"!
