"Did you know that milk coffee is also divided into Italian and French? "This was an interesting topic I heard while drinking coffee in a coffee shop on Qianjie yesterday. Because it broke the understanding of many friends, everyone at the scene started a discussion with great interest. Among the discussions, the question that everyone was most interested in was: Why is milk coffee divided into "Italian" and "French"?

From a certain perspective, milk coffee can indeed be distinguished between intentional and French, and Qianjie has shared it many times. The difference between them can be said to be very obvious. Whether it is taste or taste, they are all very different.

What is the difference between "Italian milk coffee" and "French milk coffee"? I believe everyone already knows it. It refers to various milk coffees made using espresso extracted from an espresso machine as a base and then adding milk. Things like latte, cappuccino, Australian white, Dirty, etc., all belong to the category of Italian milk coffee.

The so-called "French milk coffee" refers to milk coffee made from any black coffee and milk. No matter whether the black coffee you use is hand-brewed coffee or coffee made from other equipment such as a French press pot, milk coffee made with these black coffee as a base and adding milk can be called "French milk coffee" or "Oulei coffee." Around the 17th century, coffee began to become popular in France, and many French people had the habit of drinking coffee. Especially at breakfast, a cup of coffee is simply not too moisturizing. But because coffee at that time was mainly heavy roasted, and many people were not able to accept the bitterness of coffee, it was a very common practice to add various seasonings to coffee to balance the bitterness.

Milk is one of the most commonly added condiments to coffee. By adding heated milk to the brewed coffee, a cup of coffee with sweet taste and mild taste is ready for breakfast. The coffee made in this way was named "Café Au Lait", which means "milk" in French, which translates to "coffee and milk", and "Oulei Coffee" is its transliteration name. As you can see, the main difference between the two lies in the coffee base of milk coffee. One is espresso extracted using an espresso machine, and the other is black coffee made in any way. The difference in the base is the key factor that makes the difference in the taste and taste of coffee. Why? Because there is a big difference in their concentrations.

When making espresso, the coffee machine uses pressure-assisted extraction, so it can dissolve a large amount of flavor substances in the coffee with a small amount of water. Take Qianjie as an example. The coffee beans used to make espresso here on Qianjie are Qianjie Essi Huakui in the bean list. The parameters are: 20g powder, powder to liquid ratio 1:2, and time is 30 seconds.

The final espresso liquor weighs 40ml and has a concentration of as high as 11%. It tastes very mellow and the taste is mainly sweet and sour. You can taste the flavors of citrus, strawberry, and floral flowers. Then we add 200ml of milk in a ratio of 1:5, so that a cup of Huakui SOE latte is finished. Due to the high concentration of the coffee base, this cup of latte has a very thick taste, and with the addition of milk, it tastes very smooth. Then the same is true in terms of taste. Because the concentration of coffee base is high, even if more milk is added, we can obviously drink the flavors of strawberry, citrus, and caramel, which is very good.

Because the coffee base used in Oulei Coffee is made under normal pressure, the concentration of these coffees is usually not too high. Take hand-brewed coffee as an example. When Qianjie makes the coffee base used for Oulei coffee, it uses parameters with high extraction efficiency to brew the coffee, because only in this way can we not let the concentration of the coffee be too low, which in turn leads to a very watery, thin taste after adding milk, and a very faint taste. The coffee beans used in the Front Street demonstration here are still Front Street Essay Huakui, which is suitable for hand-brewed and espresso making. The brewing parameters are those used for ice brewing: the ratio of powder to water is 1:10, and the grinding degree is 20. The sieve rate is 80% of the sieve, the extraction time is 2 minutes, the brewing water temperature is 92°C, and the amount of powder used this time is 20g.

Skip the brewing process! Although hand-brewed coffee brewed with such parameters will have a higher concentration than conventional hand-brewed coffee, it is still much lower than espresso, not even half of espresso. Of course, we cannot measure this cup of coffee by concentrated standards. Drip-down coffee has its own standards. And it tastes very full, and you can also clearly taste the flavors of berries, citrus, and floral flowers. But because the concentration is not as high as concentrated, it cannot be added to too much milk. It is generally made at a ratio of 1:1.

Front Street poured hot milk at a ratio of 1:1. Although the milk coffee made in this way was not as full and had a strong taste as the former, it was also very delicious. Because the concentration is not high, the overall burden will not be too big on our drink. The taste and taste are very soft, and the flavor is prominent enough, which is also very good.

To sum up, everyone should know the difference between "Italian milk coffee" and "French milk coffee". So the above is all the content shared by Qianjie this time. Friends who have not tried Oulei Coffee can still try it, because Qianjie knows that many friends have certain prejudices about the practice of hand-brewed milk, but the fact is that its taste will really differ from what everyone imagined, which is quite good ~
