Can coffee beans that have passed their shelf life still be drunk? What is the best taste and shelf life for coffee beans?
There are often friends who forget about coffee beans after buying them, and some of them have been forgotten for a long time, so they just put them out of date! So occasionally, a friend will come to Qianjie and ask: Can you still drink expired coffee beans... To be reasonable, no matter how you store it, Qianjie does not recommend drinking coffee brewed with expired coffee beans, both because of food safety issues and taste reasons. Compared with most common foods, the shelf life of coffee beans is relatively longer, because it is a food with low water activity and is not so easy to deteriorate, so the shelf life will be relatively long. For example, the packaging of coffee beans sold on the street has a shelf life of 1 year (after all, it is not illegal).
This one-year shelf life is derived from the results of experiments and testing by professionals. As long as it is stored properly, the coffee beans will not have a high probability of spoilage during this time and can be eaten with confidence. After this period of time, the probability of qualitative change of coffee beans has increased, and the risk of consumption has increased. For the sake of human safety, consumption is not recommended. On the other hand, if the coffee beans have not deteriorated, they can still be drunk after the shelf life has passed. But even so, Qianjie does not recommend drinking it because its taste is not good enough for us to resist the risks and taste it.
As we all know, coffee beans have a taste appreciation period in addition to the shelf life. The so-called taste appreciation period refers to the best taste time. During this time, we can taste the coffee with the strongest aroma, and after the taste appreciation period, coffee will not taste so good! Why? Because the aroma of coffee beans is volatile, the aroma will be continuously lost after being baked. There has been an experiment on Qianjie. If stored properly, the taste period of coffee beans is about 2 months. After 2 months, because the aroma of the coffee beans has been greatly lost, the performance of the brewed coffee will be relatively mediocre, less fragrant, and less prominent in flavor. Then this situation continues to occur, and the aroma of coffee will be less and less until the aroma of the coffee completely dissipates, we can only drink the sweet, sour and bitter taste of the coffee itself without any aroma. It can drink, but it is not good.
Take any lightly baked beans as an example. The flavors produced by freshly baked and raised lightly baked beans are very rich, including strawberries, citrus, floral flowers, guava, and cream. The taste is as sweet and sour as fruit juice. After leaving lightly baked beans for three months, we can only drink the flavor of the coffee itself, but there are no flavors like strawberry, floral flowers, and guava, because the aroma that makes us associate has all evaporated. Without the aroma, coffee tastes very monotonous and mediocre. This is what Qianjie mentioned earlier: it can be drunk, but it is not good.
Therefore, Qianjie does not recommend that you use expired coffee beans to brew coffee, not only because we cannot ensure whether it will deteriorate or cause harm to the human body, but also because its taste is not as good as it can allow us to face the risks (if it is, it's better not to try). This is also the reason why Qianjie always emphasizes that coffee should be drunk while it is fresh. Coffee is still the best, no matter the taste, it is still safe ~~

As we all know, we usually extract espresso according to a certain formula. The purpose is to get an espresso with an extraction rate and concentration that meet or are close to our standards. But occasionally, we get caught
