1. The thickness of the milk foam Foam refers to the foam of milk! Although Qianjie stores do not produce coffee, Qianjie uses different liquid amounts of milk when making Australian White and Latte, which makes the final cup. The amount makes a certain difference! Latte adds more milk, so the cup size of latte will be larger, and Australia and White will be smaller in comparison.

The reason why there is such a difference is that latte requires a large amount of milk to balance the bitterness of the coffee, so that the coffee will not taste very bitter and the taste is balanced and soft; while Australian White needs to highlight the taste of coffee, less milk will be used to prevent milk from overshadowing the taste of coffee.

The difference between short extraction concentration and traditional concentration lies in the difference in extraction rate and concentration. Traditional espresso extraction is relatively complete and then the concentration is relatively low, so its taste will be relatively balanced and have a relatively complete flavor and aftertaste; while short extract concentration reduces the liquid volume, so its concentration will be slightly higher, and the extraction rate will be relatively lower. The advantage of this extraction is that coffee will have a higher sweetness and a fuller taste, will not be so bitter, and will be easier to taste.

The difference between them. The coffee beans used in Qianjie this time are the basic blend of Qianjie black cocoa in the Qianjie bean list. It is made of coffee beans from Brazil and Yunnan producing areas, and adopts medium to deep baking. When making espresso for latte, the parameters used by Qianjie are: 20g powder, a powder-to-liquid ratio of 1:2, and the extraction time is controlled at 30 seconds; while when making short-extract espresso for Australian White, Qianjie uses the parameters: 20g powder, a powder-to-liquid ratio of 1:1.5, and the extraction time is also controlled at 30 seconds.

Qianjie uses a ratio of 1:5 (ratio of coffee to milk) when making lattes, which means that 40ml of espresso will use 200ml of milk. Then the milk will be heated to 65°C, and a thick milk bubble of 0.5 to 1 cm will be formed, and then the flower will be made, so that a cup of latte will be made; while the ratio used by Qianjie when making Australian white is 1:4 (ratio of coffee to milk), that is, 30ml of espresso will use 120ml of milk. Then the milk will be heated to 55°C, and the milk will be beaten to produce a thin milk bubble with a thickness of less than 0.5 cm to make a simple flower, so that a cup of Australian white coffee will be made.

Because the milk foam is relatively thick, latte coffee will have a more dense touch to drink and the taste will be more mellow. In terms of taste, it has a very balanced performance because of the addition of a large amount of milk-the taste of coffee will not be too prominent, and it will not be concealed by the taste of milk. We can drink the basic combination of chocolate, nuts and caramel of Qianjie black cocoa. The flavor performance has a long aftertaste and outstanding sweetness, which is very good; as Qianjie said, the performance of Australian White coffee is completely different! Because not much milk is added, Australia White has a very strong coffee flavor. We can obviously taste the flavors of caramel, chocolate, nuts, and cream. However, because the espresso coffee used is a short-extract version, the extraction rate is not So complete, so although the coffee tastes strong, it is not bitter and has a high sweetness.
