What is old coffee? Basic knowledge of boutique coffee
Traditional coffee is generally shipped to consumer countries, and adventurous trips sometimes take months, so that the coffee is exposed to very hot and humid cabins, giving it a different flavor, which is what we call old coffee.
In recent years, aged coffee or old coffee has been kept in the warehouse for some years, and this ripening process reduces the acidity of coffee beans and increases their viscosity. Aged coffee is preserved longer than seasonal coffee beans or mature coffee beans (stored in the warehouse for two or three years). Recently, some Indonesian coffee, such as Indonesian monsoon coffee, has been deliberately exposed to moist and salty air to speed up aging.
