Bahia coffee has the highest average output in the world, but the land is barren and depends on expensive irrigation systems and fertilizers. Its production cost is the highest in Brazil, but it still has the potential for development because of its low land price and high production capacity. This area also produces high-quality water-washed beans, which has a low sour taste, which is not as sour as Guatemalan water-washed beans, and is quite suitable for concentrated formulations or individual products. 75% of Bahia is Arabica and the rest are stout beans.

Bahia is not high above sea level, and most of the coffee is planted in the low altitude area of 700 to 900 meters, which is the biggest resistance to the development of boutique coffee. However, the Diamond Plateau, which runs through the central part of Bahia, is the only exception.
