Coffee Lim producing area of Ethiopia
At 1200-1900 meters above sea level, the average planting height in this area is significantly lower than that in other areas, but there is still fine coffee. Lim producing area is located in the southwest of the capital, and Gemma can be reached further south. Both belong to the Kafa Forest, north of Lim and south of Gemma.
Lim is mostly washed with water beans, orange fragrance is strong, sour and lively, the flavor is similar to water washing Yega Xuefei.
Lim also has a small number of coffee beans treated by semi-washing in Indonesia, that is, after peeling, the washing and fermentation time is shortened to eight to ten hours, instead of 24 to 35 hours in Central and South America.
At this time, the pectin layer on the pods has not yet completely fallen off, that is, it is sent to the sun field to dry. Because the pectin layer is still there, the alcohol thickness can be increased, but the miscellaneous flavor will also increase. Generally speaking, the acidity of Lim coffee is lower than that of washed Sidamo and Yega Chevy, but the citrus aroma is still obvious, sweet, slightly spicy and well-balanced.
