Choose Your Coffee Beans
Start with a dark roast or a full-bodied single origin such as Mandheling, Guatemala, or an Italian-style blend. Avoid overly fine grinds typically used for espresso—they can introduce bitterness and astringency in cold water. A grind slightly finer than siphon coffee works well, balancing body and clarity without over-extracting.
Set Up Your Dripper
Use an iced drip tower or device with a dedicated coffee chamber (most hold around 400g of grounds). Place your coffee in the chamber, level it by gently pressing or using a suitable tool, then cover the grounds with a dampened filter paper—regular pour-over paper cut to size works fine. This ensures even water distribution during extraction.
Prepare Your Water

Let It Rest and Develop
After brewing, let the coffee sit at room temperature for 24–48 hours. This resting period allows natural fermentation to enhance sweetness, aroma, and complexity. Taste periodically—if it peaks at 36 hours, for example, transfer it to a sealed bottle and refrigerate. It will stay fresh for about a week.
Serving Your Iced Drip Coffee
Straight iced drip coffee is intense. For a balanced drink, pour 60–80ml into a whisky glass with a large, slow-melting ice ball (or regular ice), and add about 10ml of caramel syrup. This enhances sweetness and smoothness without masking the coffee’s character.
