The final coffee composition is based on freeze-dried coffee containing ordinary roasted fine ground coffee in freeze-dried particles, and has the sensory properties of freshly brewed common ground coffee, so it does not need to be boiled compared with ordinary ground coffee. In the described method, according to the sensory characteristics of the desired final product, a mixture of ordinary roasted fine ground coffee or a variety of common roasted fine ground coffee is added to the concentrated liquid coffee extract before freeze-drying. The coffee composition according to the invention and the preparation method thereof increase the variety of freeze-dried coffee by introducing insoluble food additives into water in a processing cycle.
