Most white-collar workers like to make instant coffee after work to achieve a refreshing effect. However, experts tell us that it is not suitable for long-term drinking, one of the main reasons is that the plant fat powder in instant coffee is more harmful to the human body.

First, the marriage between fat plant powder and coffee

Plant fat powder, also known as cream, is mainly composed of hydrogenated vegetable oil, glucose syrup and casein. The reason why plant fat powder often "goes hand in hand" with coffee is that it can enhance the quick solubility and brewability of coffee, improve the flavor of coffee, give it a "milky feeling" and make it more delicious. The grease powder used with coffee sometimes has a more romantic name-coffee companion, which further reflects the "importance" of grease powder to coffee.

There are many kinds of coffee on the market, according to the survey, most instant coffee contains plant fat powder, such as three-in-one, two-in-one, white coffee, latte, mocha coffee, caramel coffee, cappuccino and so on. In fact, according to the latest national food label regulations, all coffee containing plant fat powder will be marked with the words "plant fat powder" or "hydrogenated vegetable oil" in its ingredient list, which provides great convenience for consumers' right to know. By adding more selection to the list of ingredients, we can also find a few "zero plant fat powder" instant coffee in a large number of coffee with vegetable powder.

Second, why does the fat plant "blacken" the coffee?

Although plant fat powder is valuable to improve the taste of coffee, hydrogenated vegetable oil, one of the main components of plant fat powder, is not "friendly" to the body. This should start with hydrogenated vegetable oil, one of the main components of plant fat. Generally speaking, most vegetable oils are liquid, which is mainly due to the high degree of unsaturation of vegetable oils. In order to change vegetable oil from liquid to solid, so as to improve the stability and processing performance of vegetable oil, vegetable oil hydrogenation technology arises at the historic moment. Hydrogenated vegetable oil has the advantages of good stability, convenient transportation and strong processing performance, so it is loved by the food processing industry. However, in recent years, it has been found that not all unsaturated fatty acids can be "obediently" tamed into saturated fatty acids in the process of hydrogenation of vegetable oils, and there are always some missing fish to produce trans fatty acids in this process.

At present, it has been found that trans fatty acids are the "worst" fatty acids. Excessive intake can reduce the "good cholesterol" in the body and increase the "bad cholesterol" that causes vascular infarction in the body. The risk of cardiovascular and cerebrovascular diseases such as hyperlipidemia, atherosclerosis, hypertension and coronary heart disease is higher, while the risk of heart disease is also greatly increased. Other studies have shown that trans fatty acids metabolize more slowly than normal fatty acids, are more likely to cause obesity, and may interfere with the metabolism of other essential fatty acids. It may even reduce insulin sensitivity and induce the occurrence of type 2 diabetes.

Third, if the trans fatty acid is marked as 0 in the coffee label, does it really contain no trans fatty acid?

This is a "misunderstanding" that is easy for people to believe. National standards stipulate that if the content of trans fatty acids in 100 grams or 100 milliliters of food is no more than 0.3 grams, it can be marked as "0", so marking 0 does not mean that there are no trans fatty acids at all. Choosing coffee that contains plant fat powder may also increase the intake of trans fatty acids.

Obviously, the less trans fatty acids, the better. It is generally recommended to keep it below 2g a day. There is a calculation that "1: 2 fast dissolve about 15g, and it takes at least 45 to reach the limit." However, there may be many ways and foods for us to eat trans fatty acids, such as refined vegetable oils and fried foods. So it is necessary to reduce unnecessary intake of foods that may contain trans fatty acids.
