According to the current standards of the American Fine Coffee Association (SCAA)

1. Whether it has rich dry aroma (Fragrance). The so-called dry aroma refers to the aroma of coffee after roasting or grinding.

2. Whether it has rich wet aroma (Aroma). Wet aroma refers to the aroma of coffee extract.

3. Whether it has rich acidity (Acidity). "Acidity" refers to the sour taste of coffee. The combination of rich sour taste and sugar can increase the sweetness of the coffee liquid.

4. Whether it has rich alcohol thickness (Body). "Body" refers to the spring thickness of coffee, that is, the concentration and weight of the coffee liquid.

5. Whether it has rich afterrhyme (Aftertaste). "Aftertaste" is the afterrhyme of coffee, which is evaluated according to the flavor after drinking or spitting.

6. Whether it has rich taste (Flavor). "Flavor" refers to the taste, as well as the upper jaw to feel the aroma and taste of the coffee liquid, to understand the taste of coffee.

According to the evaluation criteria of coffee producing countries

1. What is the variety of fine coffee? Arabica's inherent variety Tibica, or bourbon, is the best.

3. Do you adopt high-level harvesting and refining methods? Is the proportion of ripe beans high? Is it the least proportion to blend in next time?

A confusing misunderstanding.

"Italian coffee is not boutique coffee, individual coffee is boutique coffee." There is something wrong with this idea. The easiest way to distinguish between boutique coffee and ordinary commercial coffee is the producing area. Boutique coffee emphasizes retrospective, and the more detailed the coffee producing area, the better. Good coffee can be called fine coffee, not necessarily black coffee can be called fine coffee.
