According to the data of Yunnan Coffee Industry Association, the annual growth rate of coffee consumption in China is about 20%, and the market share of instant coffee is about 70%.

Xiong Xiangren estimates that based on the current annual consumption of 1.8 million tons of plant fat in instant coffee in the mainland, it needs to consume nearly 3 million tons of walnut raw materials.

By the end of 2017, more than 90% of Yunnan's counties (cities and districts) had planted walnuts, with a planting area of more than 43 million mu and an output of about 1.16 million tons, ranking first in the mainland in terms of planting area, output and output value. With the large-scale production of walnuts, the output may reach more than 3 million tons. Freeze-dried walnut protein powder can be used not only in instant coffee, but also in other foods.

Chen Zhonggeng, chief economist of the Yunnan Provincial Industry and Information Technology Commission, believes that in terms of the manufacturing and processing industry, the intensive processing of walnuts is very urgent, and the research and development process is very difficult.
