The expert said that if coffee beans are roasted too strongly or for too long, in some cases, the content of acrylamide per kilogram of coffee powder may exceed 600 micrograms. Overall, instant coffee has a higher content than ground coffee.
In comparison, the content of acrylamide in French fries, biscuits and potato chips may sometimes exceed 2000 micrograms per kilogram. In 2011, the European Union stipulated that the content of acrylamide in food should not exceed 450 micrograms per kilogram. Before that, German rules had been stricter, with no more than 280 micrograms per kilogram. German coffee makers have been improving the roasting process for a long time and are generally in line with EU regulations, Rampeng said.
A reporter from time Weekly asked whether there would be a significant health risk if it exceeded this value. This is not the case, says Mr Rampong.
