Acrylamide, an odorless chemical found in most coffee, is on California's list of 100 chemicals that "may be carcinogenic or harmful to health," CERT said. Defendants such as Starbucks argue that acrylamide is a "natural product" in the baking process and that acrylamide does not pose a health risk.

Raphael Metzger, a lawyer representing CERT, said most of the defendant companies had agreed to participate in mediation to resolve the matter. Rafael also mentioned that "the purpose of the CERT is to allow coffee manufacturers to change their coffee roasting methods and reduce acrylamide levels." He also admitted that "for coffee addicts like me, it's no use just adding warnings."
