Coffee story
"Haile Serrahi" was originally the name of the last Ethiopian emperor known as the "Lord of Lions". The emperor was born at the end of the 19th century and led Ethiopia out of European imperialism in the 20th century. He is a mixed national hero and dictator. To this day, Haile Selassie is still regarded by some believers as the Messiah (Savior) appointed by God.
Kaibedo is a small coffee cooperative in a small town in Dala, Sidamo Province. the average planting area of each small coffee farmer here is about 0.60 hectares, which is composed of hundreds of coffee farmers. it is planted nearly 2000 meters above sea level. high altitude creates an ideal microclimate for producing excellent coffee, with large temperature differences and fertile soil, providing an excellent growing environment. The raw beans themselves exude strong aromas of raisins and fermented wine.
All coffee is processed in the form of private agriculture, which means that they do not belong to any cooperative. After selecting the ripe coffee cherries, they took the coffee cherries to the Capedo processing plant for grading and pre-shelling of washing treatment. Then, depending on the climate, it will be fermented in water for about 36 hours. It is then dried on a high shelf to remove the silver skin. It can be stored in the warehouse in about 10 days.
