Mexican coffee Chiapas is becoming one of the best sources of rich organic coffee.

The beautiful highlands of Chiapas are home to Blue Tribe Coffee in pursuit of what we consider to be the best coffee in the world.

These highlands are ideal places to grow shade coffee. Since farmers have grown naturally for many generations, the shade for coffee is not artificial, but given by native plants.

Chiapas Coffee is considered to be one of the best mixed Arabica high shade coffee in the world. We buy directly from micro farmers and let them, their families and communities thrive. We do our own processing after buying raw and dried coffee.

All our coffees are organic, some are organic certified, Fair Trade and / or Rainforest Alliance. We provide assurance of origin and consistency in the application of quality control in order to prepare products that meet the most stringent consumer requirements.

All our green coffee grows in natural shade at high altitudes above 1100 meters, and most of our coffee comes from strictly high-yielding (SHG) areas above 1400 meters. We only use special quality Arabica coffee beans with a SCAA rating above 84, of which 90% are Arabica coffee, the rest are Arabica bourbon coffee, Arabica coffee and Arabica coffee.

We also focus on Arabicam á ragoyoge, a very high quality extra large Arabica coffee bean that is considered to be one of the best in the world. All of our baking options are mixed with M á ragoyoge to improve aroma, body and control acidity.

The vast majority of Mexican coffee comes from much of the south of the country. Altura coffee is always grown in the mountains, of which Chiapas is the southernmost. This coffee is grown by CampesinosEcol ó gicosdela Sierra Madre de Chiapas (CESMACH). All the coffee they produce is grown in shade and creates biological corridors to promote the migration of birds and animals. Mexican coffee is usually similar to fine white wines with body and fruit flavors. This Chiapas is very rich and sweet, but the body is also lighter, with delicate fruity flavours of peaches and apricots.
