Yirga cheffe is a small town in Ethiopia, 1700-2100 meters above sea level, and it is also synonymous with Ethiopian boutique coffee. Since ancient times, it is a wetland. The ancient saying "Yega" yirga means "settle down", and "Xuefei" cheffe means "wetland". Therefore, Yejasuefi means "Let's settle down in this wetland".
Strictly speaking, Yega Xuefei is a by-product area of Ethiopia's Sidamo Sidamo province, located northwest of Sidamo, along the mountain with paste, is one of the highest coffee-producing areas in Ethiopia. However, the mode of production and flavor here are so outstanding that Ethiopian coffee farmers compete to be proud of the flavor of their coffee, so they are independent from Sidamo and become the most famous producing area in Africa. The Red Cherry Project (Operation Cherry Red Project) is a project aimed at improving the quality and value of Ethiopian coffee beans. Since 2007, it has been initiated by Dutch trader Trabocca and farmers from producing areas. At the beginning of the harvest season, 100% ripe red coffee cherries are harvested by hand according to the microclimate, which indicates that each coffee seed is ripe and rich in nutrients. In the next few years, the Red Cherry plan successively purchased facilities such as sun scaffolding, cherry peeling machine, coffee bean sorting machine, and cup testing laboratory for the producing area. Therefore, the coffee beans of the Red Cherry project are already a guarantee of high quality.
