Hunkute cooperative
In Sidamo, the Garden Coffee system is widely used. Coffee is grown near homestead with a low planting density, ranging from 1000 to 1800 plants per hectare. Most garden coffee is rich in organic nutrients. According to the changes in altitude and rainfall, the harvest season varies from September to December.
The coffee harvest here mainly depends on family labor. Freshly picked cherries are sorted before pulping and then sold to major cooperatives for wet processing. There, fresh and clean cherries are washed and let them ferment naturally. The fermented coffee is washed with clean tap water, soaked in clean water, and then dried to keep 11.5% moisture. In this process, the coffee is constantly moved on the drying bed to ensure that it dries evenly. Finally, the dry parchment is stored in a warehouse until it is sent to the central market in Addis Ababa.
