The town of Inza is located in Cauca province, bordering the neighboring province of Vera. In fact, some villages in Inza or Veridas are only a stone's throw from Veridas in the Montserrat community. As expected, the quality and characteristics of Inza coffee are very close to our favorite coffee, Wirat.

Over the years, we have been working with Inza Coffee and we have noticed that the unique sweetness of the region has the same depth and maturity. Although "cherry" and "red berry" are common descriptions of our Wirat coffee, these fruits are often fresh and lively. These fruits can also be used to describe the Inza coffee we see, but it is more mature and more mature. Black cherries and ripe berry jams are common reviews, as well as full-bodied red wines. Fruit ripening can cross wild routes, and some careful choices are needed to keep it in what we consider a "safe zone".

Inza coffee in Atlas comes from 10 Verida around the town: Guanacas, Milagrosa, Turmina, Santa Teresa, Pedregal, San Antonio, Yakiwa, San Andres, Segovia and Viboral. Small farmers use traditional fermentation methods to wash their coffee and then dry it on raised beds on the farm. The average farm area is 1-2 hectares, and Cauca's main crops and flies produce an average of 10-20 bags per year.

Although we have been buying Inza coffee on a seasonal basis for many years, we are only just beginning to explore the potential of this amazing area.
