Alida Manor is located in the Boquete producing area, with a total area of 65 hectares, is one of the highest coffee farms in Panama. Located at the intersection of the cold air in the north and the warm Atlantic current in the south, the fertile volcanic soil provides sufficient nutrients for coffee, more than half of which is within the Baru Volcano National Park, and all trees are prohibited from being felled, creating excellent natural ecological conditions.

30 hectares of the estate are planted with coffee trees, and the remaining 35 hectares are virgin forests. Coffee is grown from 1670 meters to 1850 meters above sea level.

There are three main varieties planted in Elida Manor, namely, Catuai (Kaduai), Typica (Iron pickup) and Geisha (Rose Summer). The processing plant of the manor is halfway up the hillside. After the coffee is picked, it can be transported to the factory for processing as soon as possible to ensure that the quality of the coffee fruit is not affected.

The coffee flavor of Alida Manor is stronger and more rich and varied than most Panamanian coffee. Of course, the terrain at ultra-high altitude also has its drawbacks. Due to the excessive temperature difference between morning and evening, it takes five years for the coffee to be harvested for the first time after sowing. The waiting period for receipt is quite long (usually only 3 years for coffee in the producing area). Although the plant growth is slow, it is very helpful to the development of coffee flavor.

The coffee in Elida manor is only allowed to pick the most ripe coffee fruit (Ripe on Pinton) by hand, and the pectin naturally has a high sugar content, which is the basis for producing the high quality flavor of Elida. Wilford has also experimented with quite a variety of sun drying methods, including traditional sun scaffolding, modern scaffolding, courtyard exposure, shelter drying and mechanical drying, during the sun drying stage. Wilford requires employees to carefully pick out defective beans that are not good enough by hand.

High quality Elida coffee is available in three treatments: water washing (Washed Process), honey treatment (Honey Process) and sun treatment (Natural Process).

Alida Manor achieved great results at BOP (Best of Panama) in 2018, winning the double champion of the geisha tanning group, the water washing group and the best manor of the year. The green top water also used the super high score of 94.66, breaking the record of 2016 BOP Alida green top water washing rose summer record of 94.15.

Knowledge expansion: El Burro Donkey Manor under Alida Manor also has a special treatment ASD anaerobic slow drying treatment (ASD Process). When El Burro cherries are harvested, they are transported to Elida Mill and placed in a fermentor for 5 days, then placed on a drying bed on the patio, which is covered with acrylic roof and placed in a thick layer, so that it will slowly dry and the drying cycle lasts for 5 weeks. This is what we call ASD.
