If we look at the high-quality tea in China, most of the tea also comes from unfertilized vegetable gardens. The tea trees in those gardens grow much longer. As a result, it produces more polyphenols and minerals, giving a strong aftertaste. Yunnan is a sustainable tea garden kingdom. Tea trees are now planted in many countries. However, according to my experience, the sustainable tea garden in Yunnan, China is second to none. Yunnan Province has a large land area, which is larger than that of Japan. Outside Yunnan, 90% are made up of mountains. In general, the more remote the village, the higher the degree of sustainable development of the tea garden. In those remote or less well-known areas, tea trees are left in nature. The owner of the garden only weeds once a year before picking tea. I spend nearly two months drinking Yunnan tea every year. This is because I am fascinated by a large number of sustainable gardens in Yunnan. Protection of sustainable tea gardens although I mentioned that there are many sustainable tea gardens in Yunnan, this does not mean that Yunnan is full of sustainable tea gardens. According to my experience, more than 95% of the tea gardens have been fertilized. Sustainable gardens are left only in remote mountainous areas far from the center of the village. As a general trend in China, once the tea producing area is famous. The price of tea has soared. Subsequently, the owner of the tea garden applied a large amount of fertilizer, hoping to increase both production and income.

What is interesting about the current situation of sustainable gardens in China is that many people in China are beginning to be very interested in Saint-Tai. This means sustainable tea or ecological tea in China. I think this is a very good trend, compared with people who only talked about the age of the tree and the name of the place of origin. However, I also realize that many of the so-called Shengtai tea gardens are not really sustainable in China. Because many people think that organic fertilizers and animal manure are acceptable. If animal manure is poured into the tea garden, the tea will grow rapidly. Even if the tea tree is older, the quality of the tea will decline. Fertilized tea trees become weak; sometimes hundreds-year-old tea trees die suddenly. Literally, fertilizer makes the garden unsustainable. To protect the effect of sustainable development of tea garden we think it is very important to carry out continuous education for tea garden owners in Yunnan. We need to make them understand why fertilizer is harmful to tea trees. Many people are surprised when they put tea between fertilized tea and unfertilized tea. They often drink tea. But they have never compared tea grown in different ways. Once the locals understand the difference between the two, they understand the value of sustainable tea gardens. For those sustainable tea, we usually pay a higher unit price. The reason is that the quality of tea is high, the functional substances are rich and the yield is low. We must encourage them to maintain sustainable tea gardens instead of using chemical fertilizers to sell more tea, but of lower quality. At the same time, we have to make it clear to them that we are willing to pay more, not because of the famous origin, but because of the different quality of tea.
