This is Ethiopia's typical high altitude terrain, even the lowest land mass is more than 1900 meters above sea level. Located in Guixia Village, you can directly overlook the beautiful scenery of the ancient forest.

Although both beans are classified as "red label" in the country, they are actually products under completely different classification systems in the two estates.

Friends who have known about "the road to fame in rose summer" should know that Emerald Manor is not only the excavator of rose summer flavor, but also the promoter of rose summer, but also the pioneer of branding top rose summer. Among them,"Esmeralda Special" is what we refer to as the red label, which belongs to the highest-ranking Guixia brand. Translated into Chinese, it is "Emerald Special Selection," and "Red Label" is only the name circulated in China. Emerald Special Selection gathers the top summer batches of Emerald Manor (including bidding). The quality needs to meet the planting altitude of 1600-1800 meters and the cup test score of more than 90 points.

Obviously, Guixia Village's grading system was based on the business model built by Emerald Manor. Different characters and microclimate differences of main combination plants were analyzed, and the most suitable variety was selected for each plot and numbered in detail for later traceability.

According to the internal classification standards of Guixia Village, the coffee produced can be divided into five grades: bidding, gold label, red label, green label and Chaka. The official name of the red label is Growers Reserve, which translates to Growers Reserve. This batch will account for 15% of the estate's total production and will need to have at least 88 points on the SCA Cup. It can be seen that the "red label" here is not the highest grade product in Guixia Village.

Check "hukou", rose summer varieties are also different

There was an article in Qianjie that popularized science. It won the laurel in the competition and became a world-famous fine bean rose summer. After sample comparison, it was found that it was collected from Gesha Forest near Kaffa Forest in southwest Ethiopia in the 1930s. The variety "geisha T2722" was later catalogued by CATIE as an antifungal variety.

Due to the lack of genetic comparison technology in that year, the seed selection work in Guixia Village was led by Willem Boot. The owner of the estate Adam was selected from the vast Gesha Forest by comparing the plant shape and flavor performance of Panama Guixia. These rose seeds were not verified to be T2722 of that year.

In addition, there are three varieties planted in Guixia Village, including Guixia 1931, Gori Guixia, and another non-Guixia seed, Illubabor. As long as it meets the internal standards of the manor, it can be classified as "Red Label of Guixia Village". Therefore, there will also be "red label" grades on the market, which have nothing to do with rose summer varieties.

The red label batch of Guixia Village purchased by Qianjie belongs to Gori Guixia. It was found by Adam, the owner of the estate, in Gori Forest near the estate. He felt that it was very similar to the Guixia plant, so he brought it back and planted it under the name "Gori gesha". Compared to Panama's T2722, it is closer to Ethiopia's native summer species.

It's all sun, who tastes better?

At present, these two "red labels", the front street started are sun batches, different climatic factors in the two places will make the sun treatment process to form a subtle flavor difference.

To dry the coffee cherries more evenly, Emerald Estate's sun beans are produced in combination with traditional patio drying and an electric Guardiola dryer. Guardiola allows a constant flow of hot air around the beans to evenly remove moisture and present a more consistent floral flavor spectrum.

The main harvest season in Guixia Village is from December to March of the following year. At this time, it is in the dry season and it rarely rains. Therefore, the manor can adopt the natural drying method of sunbeds. Compared with the relatively hot and humid season in Central and South America, the sun treatment in Guixia Village is more likely to highlight the clean and natural sun flavor.

Through the cup test of two rose summer coffee, the front street feels the elegant fragrance of pink roses from the sun red label of Emerald Manor, complex and delicate fruit tones ranging from berries, citrus, mango, peach, pineapple to guava, with cocoa flavor and fresh smell of orange peel, no bitterness, no weight, more like tea.

As for the red label batch of Rose Summer Village, it not only has a light jasmine fragrance, rich in berry and apricot fruit, but also adds the bright acid of African coffee. The texture is round, creamy and caramel tail reminiscent of toffee.
