There are two reasons! One is because the shelf life of coffee will be one year, under normal circumstances, coffee beans are difficult to put after the expiration date, unless it is really bad! Otherwise, we will have a lot of ways to prepare and consume it, and another reason is that we want to taste the heyday of this bean, that is, when it is at its best. To this end, we need to know when coffee beans are baked! Nowadays, with the prevalence of the concept of boutique coffee, the reason for people to drink coffee is no longer just to consume caffeine, but also to feel the various flavor properties emitted from the coffee. In order to achieve this goal, people put more time and energy into taking care of the coffee from the seed to the cup, in order to feel more coffee flavor in the final cup. And the mainstream baking degree from deep to shallow is also the reason.

However, most of the flavor we feel from coffee is the association caused by aroma. So, how long does it take to roast coffee beans? If the coffee beans are stored routinely after roasting (stored in a cool place at room temperature, sealed storage), then the general time for the aroma to volatilize is about two months. After baking, it takes about 5 days for coffee beans to emit a large amount of carbon dioxide and eliminate dryness (depending on the degree of roasting). So in theory, the 5-60 days of baking is the best time for us to feel the full flavor of coffee (preferably within 45 days, because it's not always sealed). In order to better understand, people give it the title of "the best taste period", while the days of exhaust and elimination of dryness are called "bean cultivation period".

Therefore, we can use the above information as a reference when buying beans. If you want to drink immediately, you can buy beans that are a few days away from the production date. If you don't want to drink immediately, if you want to buy them and leave them, then buy the freshest coffee beans.
