BOP is the biggest coffee and raw bean competition in Panama. This event brings together countless famous Panamanian villages every year to compete for supremacy. The winners of the competition can not only get the corresponding honor, but also get a considerable income from the post-competition auction. Therefore, participating in BOP is a good and harmless choice for all Panamanian coffee farms.

However, there is such a manor in Panama that never takes part in this BOP competition that can enhance its fame. But even so, its fame is still as good as that of the famous houses on the field. So today, what the front street still shares is the legendary story of the top Rose Summer Village in Panama! The protagonist of this story is Deborah Manor.

Deborah Manor (Deborah) was founded by Mr. Jamison Savage in 2006. Like most Panamanian coffee ranchers, Mr Jamison Savage is not a native Panamanian. He was born in the United States and used to be a banker. It was not until he met and married Mrs. Panama that he moved to Panama and began to work in the coffee industry.

Deborah Manor is located in the Vulcan region, one of the three major producing areas of Panama, in the tropical rainforest deep in the resource-rich Baru volcanic belt. Not only sit on the fertile volcanic soil, the rainfall is also abundant, the annual rainfall is as high as 2200 mm. Deborah Manor, with an elevation of more than 1900 meters, is one of the few high-altitude estates in Panama. It is precisely because of this height that Deborah Manor is shrouded in clouds all the year round, and the sunshine time is greatly reduced. Such an environment is an excellent environment for growing up in Rose Summer, which is delicate and expensive. Thanks to the high altitude, the temperature difference between day and night at Deborah Manor will be larger. The lowest temperature at night will drop to 10 °C! The cold environment slows the ripening time of the coffee fruit, and at the same time, it also urges the coffee to accumulate more substances with low molecular weight to lower the freezing point at night to resist the cold. And these substances are the key factors to make coffee sweeter.

In the process of cultivating coffee, Mr. Savage adheres to a principle, that is to breed delicious coffee in the most natural way. Never use gas engines, chemical pesticides and herbicides. And this practice has a professional term-biodynamic method (Biodynamics). The so-called biodynamic method is a comprehensive organic agricultural system, through the ecological environment of the whole farm as a whole, to maximize the use of natural circulation and biodiversity to breed crops. Therefore, in addition to coffee trees and other plants, you can also see herds of livestock at Deborah Manor, which also play an important role in the operation of the farm.

But not all manors can implement this method of cultivation, because without spraying pesticides, coffee is easily eroded by pests and diseases. But fortunately, Deborah Manor is very high above sea level! The environmental temperature in high altitude area is low, which is not suitable for the survival of pests, fungi and other diseases. Therefore, Mr. Savage can be free to implement the biodynamic law! It is worth mentioning that at the beginning of the establishment of the manor, many people were not optimistic about it. After all, the altitude is too high, coffee trees do not like the cold, it is easy to have no harvest because of frost. But fortunately, Mr. Savage did not stop easily, which made the manor what it is today.

Although Deborah Manor does not participate in the BOP, we can often see contestants from different countries use Deborah Manor beans to win excellent places at world coffee competitions. In addition to the name of Deborah Manor, we can also see the name "Savage Series" coming out of the stage. Savage? The name may sound familiar to many friends. That's right! That's the name of the owner of Deborah Manor! In addition to managing Deborah Manor, Mr. Jamison Savage has set up a brand named after him, the Savage Coffee Project (Savage Coffee).

Because of the limited production capacity of Deborah Manor, Mr. Savage hopes to conduct more experiments to share more high-quality coffee with the market. As a result, he founded the Savage Coffee project and named it after him, which is enough to show the importance he attaches to the project. The project will focus on harvesting high-quality coffee (mainly rose summer) grown by small farmers near Deborah Manor, and then process it with the coffee processing technology of Deborah Manor, and finally distinguish it before starting to sell!

Mr. Savage divides the products into three series, namely "sublimation Series" (Ascesin Series), "Savage selection Series" (Savage Anthologies), and "Savage Foundation Series" (Savaga Fundamentals). The sublimation series mainly sells some experimental micro-batches of coffee beans, and the output is not much because it is a micro-batch; the Savage selection series is a collection of rose summer planted by four estates owned by the Deborah family / cooperation, so it is often called the rose summer series; the Savage basic series is a collection of the rose summer planted by the surrounding small farmers, as well as some non-rose summer grown on the manor, and the beans they deal with!

And the beans in the selection series can be said to have the most contact with this brand in our daily life! The four estates that produce rosy summers for the series are Deborah, Morgan, Iris and Don Eduardo. In addition to the manor, Mr. Savage subdivided the rose summers according to the different treatments used for coffee beans. They are: traditional category, anaerobic fermentation category, yeast category, and CM category. And if you order a large number of batches, you can even propose to the manor to make exclusive processing batches.

Here we will focus on CM! The full name of CM is "Carbonic Mercertion", which translates to carbon dioxide impregnation and is the specialty of Mr. Savage, the owner of the manor. He drew inspiration from the wine industry and jointly developed carbon dioxide impregnation and anaerobic treatment with other well-known people, which completely set off a new revolution in global coffee processing. So! In order to taste this successful delicacy, Qianjie specially acquired a CM processing Rose Summer of the Savage selection series to experience it!

Front Street Coffee: Panamanian Deborah Manor Savage Series Rose Summer Bright country: Panama production area: Walken Manor: Morgan Manor altitude: 1850 meters above sea level: rose summer treatment: carbon dioxide impregnation washing

Flavor: longan, sugarcane, green extract, guava, oolong tea

It can be seen from the message that this rosy summer comes from Morgan Manor. Morgan Manor, which is owned by Mr. Jamison Savage and the Morgan family, is currently managed by Mr. Savage. The estate, also located in the Walken producing area, is 1850 meters above sea level and covers an area of 5 hectares, with an average of about 2000 coffee trees per hectare. I believe many friends have found that the name of Rosa carries a brand-new word "Illumination". Brightness is a unique name given by Mr. Savage to the treatment, which is a carbon dioxide impregnation washing method!

This way of handling is very special! After the coffee fruit is actually collected, it will be floated, and then the selected coffee fruit will be put into a sealed bucket, and then carbon dioxide will be injected into the barrel to assist fermentation! After the fermentation is over, the process of washing: remove the pectin from the pericarp of the coffee fruit, and then dry it to the specified water content. The rose summer treated in this way not only enhances the original flavor performance, but also has a very high degree of cleanliness. Therefore, Qianjie uses a medium-light baking to cook this specially treated rose summer! So that the flavor of this rose summer can be more fully presented. In the eighth hour of baking, Qianjie used a cup test to feel the wonderful taste of this rosy summer.

In the stage of smelling incense, Qianjie felt some spices, which made people think about the taste of this coffee! Followed by the fragrance of citrus peel, as well as the taste of green. After breaking the dregs, I began to taste the sweetness of sugarcane directly at the entrance, followed by very sweet fruit flavors such as Sydney and longan, and the tail rhyme began to show the fragrance of oolong tea with a high cleanliness, smooth and light taste, and a long and lasting finish.
