In recent years, the coffee variety Xizhao Sidra is often talked about and is becoming more and more popular, often appearing in world-class coffee competitions and in the menus of many coffee shops. Therefore, many people wonder what is the origin of this claw variety.

Xizhuo Sidra

The name Xi Zao is the transliteration of Sidra, which means "apple juice, cider" in Spanish. The plant of the claw has an obviously thick trunk, which is very tall and can grow up to 4 meters high. There are dark green leaves with wavy edges, slender five-petal coffee blossoms, cherry fruits with tips and larger sizes than other Arabica varieties, and coffee beans are longer than ordinary Arabica varieties.

The fruit of Xizao has dense growth and high yield, although it is not resistant to leaf rust and has certain resistance to several pests and coffee diseases. it is suitable for growing in shady environment between 1600 and 1800 above sea level.

Originally, Jooyeon Jeon, a South Korean contestant, won the title in 2019 when Jooyeon Jeon, a South Korean contestant from the World Barista Competition (WBC), was introduced as "Bourbon Sidra" as a hybrid of "Red Bourbon and Iron pickup" with a product from Columbia's Big Beak Farm. After that, in the coffee competitions in 2022 and 2023, the winners chose the Greek claw variety from Colombia.

As a result, many people initially recognized the variety as a "Colombian hybrid". In fact, it is not. According to some reports, the origin of the claw originally came from the province of Picincha, Ecuador. There used to be a breeding center for Nestle Coffee to develop breeding hybrids between native Ethiopian species and bourbon or other varieties, and because the breeding center had been closed, the seeds were exiled.

Until later, it was discovered and cultivated by local farmers, when the improved Typica Mejorado and Sidra varieties were discovered. In addition, these two varieties have become the main coffee varieties grown in Ecuador, which appeared frequently in the first COE Cup held in Ecuador in 2021, and then came to Colombia through mutual exchanges among farmers. Colombia has become the birthplace of Hijaw until now.

Later, tests by WCR (World Coffee Research Center) found that its genes were very close to those of native species in Ethiopia. This further confirms that the claw is the coffee breeding center from Nestl é, and explains why the claw has some floral and fruity characteristics.

At present, due to the poor resistance of Greek claw varieties to coffee leaf rust and environmental requirements such as shade planting in areas above 1600 meters above sea level, it is not widely planted, mainly in Colombia and Ecuador.
