First of all, we need to know what is "Mandheling" ~ "Manning" and "manning" does not refer to a coffee variety, nor does it refer to a producing area, let alone the name of any manor / cooperative, it refers to coffee from Sumatra. The story about Mantenin is already familiar to all of you. The brief introduction is that there is a people in Sumatra called "Mandainin" and "Mandaling", which mainly depend on coffee cultivation and management to make a living. But after a mistake, the coffee produced in Sumatra was mistaken as "Mandenin" (Mandenin's mispronunciation), and then the coffee exported by "Mandenin" became very popular in Japan, and since then, all coffee beans produced from Sumatra will be mistaken and sold under the name of the popular "Mandenin".
So we can know that Mantenin is a mistranslation of "Mandenin", and it represents coffee produced in Sumatra.
What's the difference between Manning and Golden Manning? The first is where they come from! Mantenin in the rations series is from the Lindong "Lintong" mountains around Lake dopa in north-central Sumatra. Lin Dong District is 1100 to 1600 meters above sea level, and the most classic flavor in people's mouth comes from Lin Dong, so Qianjie chose the classic produced in this place (Manning) as a part of the rations (also known as Lin Dong Mantenin). Golden Manning is produced in Gayo Mountain, a mountain in northwest Sumatra, whose name comes from the local Gayo people. The producing area is 1300-1600 meters above sea level, which will be higher than that in Lindong. This producing area is a popular Indonesian producing area in recent years, because the coffee produced is cleaner than that produced by Lin Dong, so it has become a new love for many boutique coffee lovers.
Second, there will be some differences in the varieties used between the two. Mantenin rations are a mixture of Tim Tim and Ateng, while Golden Manning is a single Arabica Ateng. (Ateng is the Indonesian name for the localization of Ateng= Katim) and both Lin Dong Mantenin and Golden Manning are the highest grade coffee beans in Sumatra. Indonesian coffee bean grading is a combination of size and defect rate, the highest grade is G1, the size requirement is 18 eyes, and the defect requirement is no more than 3 defects per 300g raw coffee beans.
Because the local weather sunshine time is short, so the conventional sun, water washing and other treatment methods that require long sunshine is not suitable for the local, the local treatment methods are generally based on wet planing. But the wet planing method has a disadvantage, that is, the quality is not stable enough. For example, it is best known that there will be a round of "violent" shelling in the treatment process, which can easily cause coffee beans to be crushed and turn into defective beans or sheep's hoof beans during the extraction process. So in general, local coffee beans will be hand-selected by hand to remove defects and Bauhinia beans, and most G1 Mantenin will use manual screening three times. And Lin Dong Mantning is the perfect model of G1 level.
Although Golden Manning is also rated as G1, it is not limited to this. PWN, which produces gold manning, is determined to make the highest quality manning different from other mantenins, so the production standard of gold manning will be higher. The size standard of Golden Manning is to reach more than 19 mesh, while the defect standard is the same as the former, but the difference is that Golden Manning is screened by a color sorter before manually screening defective beans. Through the color sorter, those imperceptible defective beans will be screened out, and then after three manual removal of defective beans, the final production of Mantenin not only has a lower defect rate, color and size are very uniform.
