Although the bourbon variety has a higher yield than the tin pickup, it is still considered to be a lower yield variety. Bourbon beans are smaller, but the leaves are greener. The bourbon fruit is red when it is ripe.

Although bourbon produces more than iron pickup, it is considered a lower-yielding variety. Bourbon beans are smaller, but the leaves are greener in color and texture. Bourbon coffee cherries are red when ripe, and yellow and orange coffee cherries are specially bred. This coffee berry is civilized with complex acidity and surprisingly balanced taste. Bourbon includes many cultivars, such as Kent, Jackson and Miriam, the latter two common in Rwanda and Burundi. Yellow Bourbon may have crossed over Red Bourbon and Botukatu (Brazil) in Marcelo to present pigment yellow.
