BREAD, ESPRESSO &, Tokyo's most popular bakery coffee shop, has arrived in Hong Kong. This shop has eight branches in Tokyo and Osaka, and is now introduced by Victor, a Hong Kong resident. "I went there a few days later and noticed a lady who went there both morning and afternoon, on consecutive days. I went up to talk to her and she smiled because she really liked it. Besides, there were so many bread styles. How could she try them all at once?"

Therefore, he spent a year to approach the Japanese boss about opening a branch in Hong Kong, and the result was of course successful. First, the store decoration implements the light-colored log design of Japanese stores, and a lot of natural light is used through the floor-to-ceiling glass windows on both sides of the store. The sense of space is greatly increased, and it is leisurely and enjoyable.

The restaurant currently has three bakers, all of whom are Hong Kong people, but many of them come from different backgrounds. Patrick Yim, a baker in Hong Kong, has been responsible for bread production at Samsung Michelin restaurant L Atelier de Joel Robuchon for 6 years, and served as the head chef of another famous French restaurant DALLOYAU. Before opening the store, he and one of his colleagues went to Omotesando to learn the essence of bread making in our shop. Patrick returned to Hong Kong and designed three exclusive limited edition products, including a mini French bag of cherry blossom salt ($15), a spicy smoked salmon and herb French tart ($26) and a sausage and onion French tart ($26).

French Smoked Salmon Sandwich ($58, with coffee or tea at breakfast): Fish served on a special round bread, soft and cooked.

"In fact, Japanese shops are also given a lot of freedom, such as the limited bread of Hong Kong shops. Another degree of freedom is coffee taste, the shop is full of Italian brand illy, but I personally like coffee, there is little research! I tried blind tasting with several experienced baristas in Hong Kong and chose Brazilian, Ethiopian and Indonesian Fair Trade coffee beans to combine into my own house blend coffee flavor. Of course, from time to time, I will also select a small amount of good quality single-origin coffee for cold brewing or hand brewing." Victor said.

However, he seriously added bread ingredients such as eggs, flour, fresh milk, and even the stove are all Japanese shop standards, especially the signature French toast ($68), just like our shop, sliced his own signature French square bread, put it in a mixture of Japanese eggs, fresh milk, sugar and French cream a day ago, and then refrigerate it for 24 hours after the square bread is fully soaked and absorbed. After placing an order, fry it on an iron plate with open fire and bake it. Fresh baked toast served on the original iron plate, golden color attractive, soft texture, full of moist feeling, can also be eaten with Italian sophora honey, make toast more natural honey fragrance. This toast starts at 3pm every day and is limited to 30 servings per day. It would be strange if there were no people!
