Some coffee manufacturers in Taiwan have brought back geisha beans from their country of origin in Panama to Taiwan for trial planting. After five years of efforts, the Daguan tribe in Taichung has finally blossomed and is expected to be listed in a small number by the end of this year.

Wu Yishan, owner of the Bidu Caf é, said: "fertilizing, disinfestating, and bagging all require a lot of care manpower in the sweet persimmon orchard, but there are only old people and children left on the mountain. After I opened a coffee shop, I wanted to slowly transform the sweet persimmon garden and plant coffee trees that do not need to be irrigated by fertilizer." He happened to get the geisha coffee beans. he planted thousands of coffee trees in the garden by natural planting, but in the first two years, the breeding failure rate was high and the survival rate was quite low. it was only after five years of domestication that he finally accepted Taiwan's soil and climate, and began to have numerous results. compared with the only geisha coffee trees left in the first year, the domesticated fruit is larger and fuller.

Before drying completely, Wu Yishan first used Yiqiao beans to make baker's yeast, soaking freshly picked coffee beans in water with honey to ferment. "shaking several times a day, bubbles will be produced on the 4th day, and hyphae can be seen." he then put the fermented water into a container with flour and salt to make yeast, and then kneaded it into dough. Geisha bread with dried berries tastes softer and has higher water retention.

In addition to geisha coffee beans, Bidu Cafe also grows Pacamara (Pacamara) from Panama and Yellow Bourbon (Yellow Bourbon) from Brazil. Pacamara is still in the process of domestication, while Huang Bourbon's production has become more stable.
