I actually thought of this when I bought chemex, so I bought a matching metal filter Kone, but the hole of kone was too thick, which caused a lot of fine powder to pass through. I was used to the pure coffee with the taste of filter paper, which was really not suitable for the taste between tipping and legal pressure, so I ordered a batch of chemex square and round filter paper. But the customs of China has been unable to clear customs for more than a month. So I want to see if filter paper + Kone can be used.
My Chemex is for 6 people, which doesn't fit very well with hario 01 filter paper, but I barely put it in a small corner. However, compared with the original simple filter paper, a layer of filter is added on the outside to reduce the speed of dripping, so it is necessary to fine-tune the powder a little bit to ensure the flow rate and get a better taste.
When doing this for the first time, it is found that the flow rate is still a little slow, and it should be thicker next time to ensure that it is not over-extracted.
Although the flow rate is a little slower and there is still room for adjustment, I am glad to see the clear coffee at last. I can feel chemex even without expensive chemex filter paper.
