Suke Quto Farm was founded in 2005. the original idea was to build an environmentally friendly plant while preserving native shade forests, starting with a farm of 5 hectares and then expanding to 221 hectares. When a wildfire destroyed the forest around the farm, many farmers began to grow corn and millet. At that time, farm owner Tesfaye had a new idea to promote coffee seeds and shade plant seedlings. Now more and more nearby farmers are sending organic coffee to the farm for processing.
The farm has changed a lot in the past few years, focusing on organic and sustainable farming, with the assistance of Dutch raw bean merchants (Trabocca), a series of experiments to improve the quality of coffee, Trabocca funded the farm to carry out an organic certification process, successfully obtained certification, Saxcot has gradually become the leading producer of high-quality coffee.
Saxcot only collects ripe cherry fresh fruit and treats it with a 5-plate Brasillian peeling machine, first washed with spring water, and then put into the sink to ferment for 48 hours. the pulp mucosa will decompose during fermentation and dry in an elevated African shed for 9 to 13 days. there are 200 scaffolding on the farm, sufficient water for washing and sun treatment.
This decaffeinated strong aroma and pleasant acidity are very rare and stunning in general low-caffeinated products.
