Antigua Flower Mountain Hunapu Project
Hunapu means "Mountain of Flowers" in K'iche, which is the native language of Guatemala. The Mountain of Flowers refers to Vulcan de Agua, the volcano next to Antigua.
Antigua, located in central Guatemala, is famous for its beautiful colonial city and has been the capital of Guatemala for 200 years. After the great earthquake of 1776, the capital was moved to what is now Guatemala City. Antigua has always been the most famous coffee-producing area in Guatemala, located in a high-altitude valley, surrounded by three major volcanoes, namely Vulcan de Agua, Fuego and Acatenango. Recently, Vulcan de Agua (Volcano of Water) has a famous washing factory "Bella Vista" at the foot of the mountain, which is owned by Luis Pedro Zelaya, a fourth-generation farmer and owns several small farms.
The farmland near Antigua is small, ranging from 1 to 4 hectares, and individual yields are not high. To support small farmers, Luis Pedro set up the "Hunapu" project to collect and deal with the fresh fruit harvested by his own farm and the 50 farmers nearby. The fruits harvested every day since six years ago are divided into different batches, but they are jointly promoted under the brand "Flower Mountain". The mixed flavor of bourbon fruits from different small farmers has become the secret of "Flower Mountain" taste.
With fertile soil, dry climate and high altitude, the volcano itself is an excellent coffee growing area. The Fairview washing plant is treated with traditional washing method and soaked in clear water for 24 hours to ensure that the mucus of the fruit can be cleaned.
Classic meticulous bourbon washing, Nordic baking in Japan, not to be missed!
