La Pira is located in the high-altitude Dota Valley of the Tarrazu region: this area is famous for producing quality coffee. The relatively young estate is only 50 years old and is owned by Carlos Urena Ceciliano, the son of the founder. He worked on the farm for eighteen years. But he has been drinking coffee all his life.
After inheriting the family farm, Carlos worked for organic coffee producers for many years, but he realized he couldn't do it on the farm. Organic coffee is good, but not for everyone. The output is greatly affected. Therefore, Carlos still adheres to the organic principle while looking for alternatives. For example, instead of using chemicals to control weeds, sheep roam freely in coffee plants and eat weeds (strangely, coffee plants leave alone). They act as automatic and mobile "fertilization units" (a great thing, of course). This eliminates the need for herbicides. This is what Carlos thinks of coffee.
Among these late-night inspirations, Carlos believes that using the coldest water may be the best way to process cherries. At night, the Dota valley became very sharp, with a cool breeze blowing through the farm. He noticed that the water on the roof of the factory spilled from the process was almost frosty. So he created a sprinkler system and a zinc ramp where water flowed out before it touched the cherries in the fermentor.
